Crawfish Fettuccine

  • 1 1/2 sticks butter
  • 3 stalks celery
  • 1 bunch green onions
  • 1 medium onion
  • 1 bell pepper
  • 3-4 pods garlic
  • 1/3 cup flour
  • 1/2 cup water
  • 2 lbs crawfish tails
  • 4 tbsp. parsley
  • 12 oz. package fettuccine noodles
  • 1 lb. mild mexican velveeta cheese, cubed
  • 1 carton half and half
  • parmesan cheese



Step 1

Melt butter. Saute onions, celery, bell pepper and garlic for 12 minutes add flour, blend well. Add water, blend well. Cook over low heat a few minutes. Add crawfish and parsley- cook 15-20 minutes over low heat. While mixture is cooking prepare noodles according to pkg. directions set aside. Add cheese to crawfish and blend well. Add half and half, blend well. Salt and pepper to tatste.Then mix noodles and crawfish place in buttered dish.Top with parmesan cheese. Bake at 350 degrees uncovered for 20 minutes or until done.
