- 2 cups flour
- 1 tsp salt
- 2/3 cup shortening
- 5-7 tbsp water

- 3/4 cup sugar
- 1 1/2 tbsp quick-cooking tapioca

- 2 1/2 cups drained, canned, pitted tart cherries
- few drops red food coloring
- 1 tbsp butter or margarine

- 3 1/2 cups peaches
- 1 cup sugar
- 1 tsp lemon juice
- 3 level tbsp minute tapioca
- 1 tbsp melted butter

Preparation
Step 1
sift flour and salt. blend shortening till size of peas. sprinkle water, a tbsp at a time, gather up in fingers, from into ball.
cherry; combine everything except butter-let stand 20 minutes. fill pie pan-dot with butter, 450-10minutes. reduce to 350-30 minutes.
peach: 450-15 or 20 minutes
