Ingredients
- 8 oz can of crushed pineapple
- 2 cups of all purpose flour
- 1 cup sugar
- 1 cup brown sugar
- 2 tsp cinnamon
- 1 cup vegetable oil
- 1/4 tsp salt
- 1/2 tsp vanilla
- 4 eggs
- 2 cups shredded carrots
- 3/4 cup chopped walnuts
- FROSTING
- 2 8oz packages of softened cream cheese
- 1/4 cup softened butter
- 1 tsp vanilla
- 1 1/2 cups confectioners sugar

Step 1
Drain pineapple, reserving 2 TBSP of juice (discard remaining juice). In large mixing bowl, combine dry ingredients. Add the eggs, oil, carrots, pineapple & juice. Beat till well combined. Stir in walnuts. Bake in greased 9X13 @ 350. 35-40. Cool and frost.
