Fried Potato Balls

You can "fill" the potato balls with a variety of mixtures, that can include cooked meat and/or veggies. Take a rounded teaspoonful of mix and form the potatoes around it, into a ball.

Ingredients

  • 4 potatoes, med size, (total 2 cups of hot riced potatoes)
  • 2 Tbsp butter
  • 1/2 cup grated cheese
  • 1/2 tsp salt
  • pinch cayenne
  • 2 Tbsp cream
  • 2 beaten egg yolks
  • 1/2 tsp baking powder
  • (flour, 1 beaten egg w/2 Tbsp water and fine bread crumbs - for frying)

Step 1

1. Cook the potatoes and put them through a ricer. To the potatoes, add the butter, cheese, salt, cayenne, cream, egg yolks and baking powder. Whip the ingredients together, until light. Shape into balls. *If you want to "stuff" the potatoes, take a somewhat compact rounded teaspoonful of meat/veggie mix. Shape the potatoes around the mix, into a ball.

2. Roll the potato balls into flour, then the egg and then into the bread crumbs.

3. Heat vegetable oil to 380 degrees and fry until golden. Drain on paper towels. Best served hot, but they are delicious cold as well.
