Ingredients

  • 3 lbs of Idaho Potatoes
  • 1/2 Stick of Butter
  • 1 C of Romano Cheese
  • 2 Eggs
  • 1/2 Glass of Milk
  • 1 8 oz Mozzarella, diced
  • Salt
  • Pepper
  • 1/2 Bag of Breadcrumbs

Preparation

Step 1

Boil potatoes (with skin) until cooked. Peel and rice potatoes in a bowl. Add butter, milk, cheese, eggs, salt and pepper. Beat with mixer until creamy. Fold in diced mozzarella. Butter a casserole dish and sprinkle with breadcrumbs. Pour in potatoes and sprinkle breadcrumbs on top. Bake in oven 375 degrees for a half hour or until golden brown.
