Shrimp and Penne

Ingredients
- 1 pound peeled and deveined frozen shrimp
- 4 Tbsp. extra-virgin olive oil
- 4 cloves garlic, minced
- 1 (14-oz) can crushed or diced tomatoes
- 1/2 c dry white wine
- 2 tsp. dried basil
- Coarse salt and cracked pepper, to taste
- 1 bay leaf
- 1/2 cup kalamata olives
- 1/2 lb. penne pasta
- 1/2 cup -1 cup crumbled feta
- 4 Tbsp. fresh chopped basil or flat-leaf parsley

Step 1
1. Put salted water on to boil.
2. Thaw shrimp under running water for 2-3 minutes, drain and set aside.
3. Heat oil, then sauté the garlic for 1 minute in a lg. nonstick skillet. Pour in tomatoes and wine. season with dried basil, salt, pepper and bay leaf. Bring to a simmer and cook uncovered for about 10 minutes, stirring often. Add olives and cook for 2 minutes; then add shrimp and cook for about 4-5 minutes. Remove from heat, remove bay leaf.
4. Cook pasta al dente, reserving 1/4 cup of pasta water before draining. Combine pasta with shrimp and sauce, adding a few teaspoons of pasta water as necessary.
5. Toss mixture with feta cheese and fresh herbs. Serve immediately.
