Ingredients

  • 4 cups mashed sweet potatoes
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/2 tsp. salt
  • 1/3 stick butter or margarine (melted)
  • 1 tsp. vanilla
  • 1 cup brown sugar
  • 1/2 cup flour
  • 1 tsp cinnamon
  • 1/3 cup butter or margarine (melted)
  • 1 cup pecans

Preparation

Step 1

Preheat oven to 425 degrees. Scrub 4-5 potato's and pierce with knife or fork. Place on a cookie sheet lined with parchment paper. Bake for 45-60 minutes, or until tender. Remove from oven and cool. Peel potatoes and mash them.

Beat eggs. Add sugar, milk, butter, salt, and vanilla; mix well. Add potato's and combine.

Preheat oven to 350, and butter a 8x8 pan.

Add potato mixture to pan.

Combine brown sugar, cinnamon, flour, and butter; add pecans.

Bake for 35-45 minutes, uncovered.
