Cajun Grilled Shrimp

Ingredients
- 2 lbs. uncooked shrimp, peeled, deveined
- 3/4 c. olive oil
- 3/4 c. red wine vinegar
- 1/4 c. Creole or Cajun seasoning
- 6 large garlic cloves, finely chopped
- Grilled crusty bread (optional)
- 6 metal skewers

Step 1
Place shrimp in large resealable plastic bag. Whisk oil, vinegar, seasoning, and garlic in medium bowl to blend. Transfer half of the dressing to bag with shrimp; reserve remaining dressing. Seal bag. Marinate shrimp at room temperature for 1 hour or refrigerate up to 2 hours, turning bag occasionally.
Prepare barbecue (medium-high heat). Thread shrimp closely together onto skewers; discard marinade in bag. Grill until shrimp are just opaque in center, about 4 minutes per side. Push shrimp off skewers onto platter. Drizzle shrimp with some of the reserved dressing.
You can serve this shrimp as an appetizer along with grilled crusty bread for sopping up the flavorful dressing.
