Ingredients

  • 1 c wheat berries
  • 1 tbsp salt
  • 1/4 c orange juice concentrate
  • 2 tbsp red wine vinegar
  • 1/3 c evoo
  • 4-5 navel oranges sections removed
  • 1 c dried cranberries
  • 2 c jicama diced
  • 1/3 c scallions chopped

Preparation

Step 1

place wheat berries in cold water and stir to clean. drain and wash again in cold water.
place cleaned berries into medium pot with 6 c. water. bring to boil over high heat, reduce to a simmer, cover and cook for 1 1/2 hours or until tender and some have split open.
remove pot from heat add salt and mix well. let stand for 30 minutes. drain wheat berries and spread out on sheet tray to cool.
in large bowl, add the orange juice, vinegar and oil. whisk together and season with salt and pepper/ set aside.
add orange sections, cranberries, jicama, chives and cooled wheat berries to bowl with the vinaigrette and gently toss together.
cover and chill in refrigerator for 1 hour.
