coarse salt
coarse ground black pepper

Step 1

Leave prime rib out overnight. Rub with butter and heavily coat with coarse salt and cracked pepper. Cook in preheated 500° oven for 10 minutes per 5#s of beef. Turn off oven and let set for 2 hours. Do not open oven.
