- 1 clove garlic, cut in half
- Nonstick olive oil cooking spray
- 1/4 cup light mayonnaise
- 1/4 cup freshly grated Parmesan cheese
- 3 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 1 teaspoon anchovy paste
- Coarsely ground black pepper
- 1 package (18-ounce) hearts of romaine lettuce, torn into bite-size pieces

1) Preheat the oven to 400°F
- 1 1/2 cups King Arthur Gluten-Free Multi-Purpose Flour or brown rice flour blend*
- 1 teaspoon baking powder
- 1/2 teaspoon xanthan gum
- 3/4 teaspoon salt
- 1/2 teaspoon dry mustard
- 1/8 to 1/4 teaspoon cayenne pepper**
- paprika (optional, for color; start with 1/4 teaspoon, adding more for deeper color)
- 1/2 cup (8 tablespoons) unsalted butter
- 2 cups grated sharp cheddar cheese
- 1 large egg
- 1 tablespoon white vinegar
- 3 tablespoons water
