Mimi's Cafe recipe
- 1 0z Butter (2 Tablespoons)
- 2 Quarts Homemade Beef Stock or 4 Cans (14 oz) Beef Broth & 1 can Beef Consommé (undiluted)
- 2 Lb Yellow Onions, halved and sliced 1/4 to 1/2" wide
- 1/4 Cup freshly ground Romano Cheese Salt & freshly ground Black Pepper, to taste
Pumpkin Custard - Microwave - for One

1. Combine all ingredients well in a small bowl
- 1/2 cup pumpkin puree
- 1 whole egg
- 1/2 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- 1 packet stevia or 1 tbsp brown sugar
Slow Cooker Bananas Foster Bread Pudding

1. Grease inside of slow cooker with oil or use a slow cooker liner
- 2 Cup bread cubes—brioche bread works best
- 4 bananas, peeled and sliced (the riper the better!)
- 2 eggs, beaten
- 1 Cup heavy cream or half & half
- 4 Tbsp butter, melted
- 1 Cup packed brown sugar
- 1/8 to 1/4 Cup spiced rum (to your taste)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 Cup chopped pecans or walnuts
- 1/4 Cup shredded coconut (optional)
Beverage - Hot Chocolate - Super Thick

- 1/2 teaspoon vanilla extract
