Tuscan Bean Soup With Spicy Shrimp

Directions: In large pot, mix olive oil, garlic, and rosemary
- Ingredients:
- 3 tsp Olive Oil
- 2 Garlic Cloves, diced
- 3 tsp Chopped Fresh Rosemary
- 1/2 cup Chopped Onion
- 3 cups Cooked or Canned Cannellini Beans, drained and rinsed
- 3 cups Vegetable Broth
- Salt & Pepper
- 12 Large Shrimp, peeled, deveined and tails removed
- 2 tsp Olive Oil
- Sprinkle of Ancho Chile Powder
- Salt & Pepper, to taste
- 1 Small Roma Tomato, diced
- 2 tsp Chopped Fresh Parsley

- Ingredients
- 2 * 2 (14-ounce) cans quartered artichoke hearts, drained
- 1/2 * 1/2 pound bowtie pasta, cooked and drained
- 1/2 * 1/2 cup, pitted and sliced black olives
- 4 * 4 sun-dried tomatoes, julienned
- 1 * 1 small red onion, chopped
- 1 * 1 garlic clove, minced
- 1 * 1 tablespoon lemon juice
- 1 * 1 tablespoon red wine vinegar
- 2 * 2 tablespoons olive oil
- 1/4 * 1/4 cup freshly chopped parsley leaves
- * Salt and freshly ground black pepper
CHEESY CHICKEN ENCHILDA SOUP

Heat oil in large saucepan; add peppers and onion and sauté until tender
- 1/2 cup chopped green pepper
- 1/2 cup chopped red pepper
- 1/2 cup chopped onion

- 1 can evaporated milk (12 oz.)
