- 2 * 2 teaspoons chopped fresh thyme
- 1/2 * 1/2 teaspoon freshly ground black pepper
- 1/4 * 1/4 teaspoon salt
- * Thyme sprigs (optional)

- 2 cups chicken or vegetable stock
- A handful dried mushrooms, such as porcini
- Salt and pepper
- 1 pound pappardelle or other wide, long-cut pasta

- 1 large fresh bay leaf
- 1 small bunch tuscan kale or swiss chard, stemmed and very thinly sliced

- 2 (10.75 ounce) cans condensed cream of mushroom soup
- 1 1/3 cups milk
- 3 tablespoons cornstarch
- 1/2 cup chopped onion
- 1 tablespoon prepared mustard
- 2 (16 ounce) cans sauerkraut, rinsed and squeezed dry
- 1 (8 ounce) package egg noodles
- 1 1/2 pounds kielbasa (Polish) sausage, cut into 1/2 inch pieces
- 2 cups shredded Swiss cheese
- 3/4 cup whole wheat bread crumbs
- 2 tablespoons butter, melted

- 3 teaspoons each ground cumin, chili powder and paprika
