Pat's Spagetti Sauce + Meatballs

- Sauce:
- 6 large cans Italian Plum Tomatoes (or crushed Progresso Tomatoes)
- 1 large can Tomato Paste
- 1/2 can water to each can of tomatoes
- 3-4 garlic cloves--whole
- Oregano--quite a bit
- Salt
- Parmesan cheese--cover sauce good and thick
- 3-4 spoon fulls sugar
- Dash red wine
- 2 carrots (whole) for acid
- Meatballs:
- 1 pound lean hamburger
- 1/2 pound lean ground pork
- 4-6 eggs
- Garlic powder (good amount)
- Salt and pepper
- 1 cup parmesan cheese
- 1 1/2 cup Italian bread crumbs
Classic Banana Bread

Preheat oven to 350 degrees
- 2 cups all purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sugar
- 1/4 cup butter, softened
- 2 large eggs
- 1 1/2 cup mashed ripe bananas (approx. 3 bananas)
- 1/3 cup plan lowfat yogurt
- 1 teaspoon vanilla extract
Chicken and Soba Noodles

In small bowl, whisk together first 7 ingredients
- 3 tablespoons low sodium soy suace
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 teaspoons grated fresh ginger
- 2 tablespoons sugar
- 1 teaspoon lime juice
- 1/4 teaspoon hot suace (tobasco)
- 1 pound boneless, skinless thinly sliced chicken breasts
- 1 package (8.8oz) soba noodles
- 3 cups broccoli flowerettes
- 1 small sweet red pepper, thinly sliced
- 1 tablespoon seseame seeds (optional)

Honey Mustard Chicken

- 1/3 cup Dijon mustard
- 1/3 cup honey
- 2 tblspns chopped fresh dill or 1 tblspoon dried dill
- 1 tspn freshly grated orange peel
- 1 (2 1/2pound) chicken, quartered
- *Variation: give the chicken a wonderful tangy taste by adding 2 tblspns of orange marmalade to the sauce.
Impossible Lasagna Pie

Heat oven to 400 degrees. Lightly grease 10x1-1/2 inch pie plate
- 1/2 cup small curd creamed cottage cheese
- 1/4 cup grated Parmesan cheese
- 1 pound ground beef, cooked and drained
- 1 tspn dried oregano leaves
- 1/2 tspn dried basil leaves
- 1-6oz can tomato paste
- 1 cup shredded mozzarella cheese
- 1 cup milk
- 2/3 cup Bisquick
- 2 eggs
- 1 tspn salt
- 1/4 tspn pepper
Green Beans with a Twist

In a skillet, saute beans and mushrooms in butter
- 1 package 16oz frozen French-style green beans
- 1 cup sliced fresh mushrooms
- 2 tablespoons butter or margarine
- 1 envelope ranch salad dressing mix (used only 1/2)
- 4 bacon strips, cooked and crumbled (optional)
50-Minute Ranch Chicken

Place dressing mix and bread crumbs in zip-lock bag
- 1 (1oz) package Ranch Dressing Mix
- 1/4 cup unseasoned bread crumbs
- 6-8 bone-in chicken pieces
