Turkey Gravy - Michael Symon's

- TURKEY GRAVY
- 2 tablespoons Olive Oil
- 1 Turkey Neck
- 4 tablespoons Unsalted Butter
- 1 cup Onion (medium dice)
- 1/2 cup Celery (medium dice)
- 1/2 cup Carrot (medium dice)
- 1 small bunch Fresh Thyme
- 1 Bay Leaf
- 4 tablespoons Flour
- 4 cups Turkey Stock
- Drippings from Roast Turkey

Cream shortening and sugar, add eggs
- 1 cup shortening
- 1-1/2 cup sugar
- 1 tspn baking soda
- 2-3/4 cup sifted flour
- 2 eggs (unbeaten)
- 2 tspn cream tartar
- 1/2 tspn salt
Chicken With Mushroom Sauce

In a skillet, brown chicken on both sides in butter; drain
- 4 boneless skinless chicken breast halves
- 2 tblspoons butter OR margarine
- 1 can (10-3/4oz) condensed cream of mushroom soup, undiluted
- 1 cup (8oz) sour cream
- 1 can (4oz) mushroom stems and pieces, drained
- 1/4 cup white wine OR chicken broth
- 1/2 tspn garlic powder
- 1/2 tspn salt
- 1/2 tspn pepper
- hot cooked noodles OR rice
- sliced almonds, toasted, optional

Salmon Patties 2

Remove skin and bones form salmon; drain well
- 1 can (approx. 7 ounces) salmon
- 1 egg
- 1/2 cup Italian bread crumbs
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 onion diced
- 1 teaspoon mustard
- Olive oil, enough to cover bottom of skillet
Sour Cream Chicken Quiche

- 1 (9-inch) frozen pie crusts, thawed
- 1 T Olive Oil
- 1/4 Cup Chopped Onion
- 1/4 Cup Chopped Green Bell Pepper
- 1 T All-Purpose flour
- 1 Cup Chopped Cooked Chicken Breast
- 1/4 t Salt
- 1/4 t Nutmeg
- 1/4 t Black Pepper
- 1/2 Cup Shredded Cheddar Cheese
- 1/4 Cup Shredded Swiss Cheese
- 2 Eggs, slightly beaten
- 3/4 Cup Milk
- 3/4 Cup Sour Cream
Poached Shrimp and Scallop Salad with Mango Salsa

This fruit-and-shellfish combination is an ideal luncheon salad
- 1/2 C (4 fl oz/125 ml) fish stock or bottled clam juice
- 3/4 lb (375 g) medium or large shrimp (prawns), peeled and deveined
- 2 large, ripe mangoes
- 1/2 red bell pepper (capsicum), seeded, deribbed and cut into 1/4 inch dice
- 1 fresh jalapeno chili pepper, seeded and minced (optional)
- 1 t grated lime zest
- Juice of 2-3 limes
- 3 T chopped fresh mint leaves, plus mint sprigs for garnish
- 2 T extra-virgin olive oil
- salt and freshly ground pepper
- lime wedges

- 1 lb. orechiette pasta
- 4 tbsp. olive oil, divided
- 3 tbsp. chopped garlic
- 2 fresh jalapeno peppers, sliced thin, plus extra for garnish
- 2 cups grated Gruyere cheese
French Dip Sandwiches (Italian Beef)

- 2 1/2 cup water
- Several garlic cloves
- 1 teaspoon seasoned salt
- 1/2 teaspoon (each) garlic salt, onion salt, Italian seasoning, oregano, and basil
