- 1 cup rice cooked and salted
- 1/4 cup sugar
- 1 (8oz) can crushed pineapple, drained

Cool Southwestern Salad with Corn and Avacado

In a large bowl, combine the lettuce, eans, corn, avocados, onions, and cilantro
- 2 small heads romain lettuce, cut into bite-size pieces (12 cups)
- 1-15oz can pinko beans, drained and rinsed
- 2 ears corn, kernels cut off cob (approx 1 cup)
- 2 avocados, chopped
- 1/2 red onion, thinly sliced
- 1/2 cup fresh cilantro sprigs
- 1/4 cup extra-virgin olive oil
- 1/4 cup fresh lime juice
- 1/2 teaspoon ground cumin
- Kosher salt and pepper
- 1/2 9oz bag tortilla chips
Salmon Patties 1

Turn salmona dn liquid intoa medium mixing bowl
- 1 can (16 ounces) salmon
- 1 small onion, finely grated (or onion powder)
- 2 tablespoons minced fresh parsley
- Ground black pepper, to taste
- 2 large eggs, well beaten
- 1 to 1 1/2 cups fine dry bread crumbs
- 3 tablespoons butter

Customize these quick-made granola bars with your favorite ingredients and add-ins
- 2 Cups gluten-free whole rolled oats
- 1 heaping cup puffed rice cereal
- 1 Cup pumpkin seeds, slivered almonds or chopped nuts
- 1/2 Cup dried cranberries, raisins or white chocolate/chocolate chips
- 2/3 Cup almond butter (or favorite nut butter)
- 2/3 Cup honey, agave or brown rice syrup
- 1 tsp cinnamon or favorite spice
- 1/4 tsp sea salt

- For the garlic croutons:
- 2 tablespoons olive oil
- 2 pounds ground turkey
- 2 cups garlic croutons (see below) or stuffing cubes
- 1 cup dried cranberries
- 2 large eggs
- 1/4 cup bread crumbs
- 2 tablespoons chopped fresh sage
- 2 teaspoons salt
- Pinch of ground cinnamon
- 1 large loaf stale country bread, crusts removed
- 1 garlic clove, minced
- 1 cup fresh oregano, finely chopped
- 1/4 cup olive oil
- Salt
Vegetable Tortellini Soup

Easy. Easy. Easy. Great comfort food on a cold or rainy day
- 6 Cups Water
- 2 Tbs Instant Beef or Chicken Bouillon Granules (4 cubes)
- 1 tsp Dried Basil, crushed
- 1/2 tsp Dried Oregano, crushed
- 1 Cup Carrots, thinly sliced
- 1 Cup Frozen Cheese Tortellini**
- 2 Cans Tomato Sauce, 8 oz. each
- 2 Small Zucchini, halved lengthwise & thinly sliced
- 2 Tbs Fresh Parsley, snipped (opt.)
- **Add more or less tortellini as desired.

- 1 quart heavy cream

- Chicken
- 5 oz chicken, skinless and boneless (1 chicken breast)
- 1 1/2 t gluten-free soy sauce
- 1/8 t salt
- 1/8 t black pepper
- 1 t rice wine (Saki)
- 1 t oil
- 1 clove of garlic, crushed and chopped
- Fried Rice
- 2 C water
- 4 oz green beans, cut into 1/2/-inch pieces
- 2 T oil
- 1/2 onion, diced
- 1/2 yellow pepper, diced
- 1/2 red pepper, diced
- 2 C of cooked rice, about 10 ounces
- 1 t oil
- 2 eggs
- 1 t gluten-free soy sauce
- 3/4 t salt
