Mango Black Bean Quinoa

All ingredients come from Trader Joe's
- 3 cups TJ's Tri Color Quinoa, cooked
- 1 can TJ's Organic Black Beans, drained and rinsed
- 1 cup TJ's Mango Chunks, defrosted and cut into bite size pieces
- 1 TJ's Red Bell Pepper, chopped
- 2 TJ's Green Onions, sliced
- 1/4 cup TJ's Fresh Cilantro, chopped
- 1/4 cup TJ's Extra Virgin Olive Oil
- Juice of 1 TJ's Lime & 1/2 teaspoon of zest
- TJ's Salt and TJ's Pepper, to taste

- 2 teaspoons sodium free chicken grillin gblend (such as Mrs. Dash)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 12 ounces green beans, ends trimmed
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1 1/2 cup frozen blueberries, thawed
- 1/4 cup cider vinegar
- 1 teaspoon sugar
- 1/2 teaspoon dried thyme
Cola Burgers

A friend who's an excellent cook shared this hamburger recipe with me, and it has since become a family favorite
- 1 egg
- 1/2 cup cola*, divided
- 1/2 cup crushed saltines (about 15)
- 6 tablespoons French salad dressing, divided
- 2 tablespoons grated Parmesan cheese
- 1/4 teaspoon salt
- 1-1/2 pounds ground beef
- 6 hamburger buns, split

- 4 cups confectioners' sugar

- 1/2 teaspoon vanilla extract

Spinach, Shrimp, and Avocado Salad

- 8 Cups Fresh Spinach, washed & dried
- 3 Dozen Medium Shrimp, approximately
- 3 Tablespoons Lemon Juice
- 3 Tablespoons Olive Oil
- 1 Tablespoons Capers, chopped
- 1/2 Teaspoon Honey
- Salt and Pepper
- 4 Plum Tomatoes, chopped
- 1 Avocado, sliced
Wiener Schnitzel

- 1/2 cup flour
- 1 egg, beaten
- 1 cup finely ground bread crumbs

Grilled Portobello Mushrooms

- 1/4 Cup Canola Oil or Extra Virgin Oiive Oil
- 3 T Chopped Onions
- 4 Cloves Garlic, minced
- 4 T Balsamic Vinegar
AM. Hot Apple Crunch

- 1/4 cup sugar
- 2 tspn cinnamon
- 1 cake mix (white, yellow, whatever)
- 1 cup chopped nuts (walnuts or pecans)
- 2 tspn nutmeg
- 3 cubes melted butter (1-1/2 cup)
Chili Stuffed Fillet of Sole

Saute onions in butter. Mix bread crumbs, onion and chili in bowl

- 2 tblspn butter
- 1 cup fresh bread crumbs
- 1 can diced green chilies
- 1 egg beaten
- 6 pieces fillet of sole
- 1 can cheddar cheese soup
- salt and pepper
Carmelized Pineapple

- 1/4 cup brown sugar
- 1/2 pineapple, cored and cut into 8 half moons (or 4 canned pineapple rings cut in half)
