Remove all excess fat and gristle from beef; cut into 1 inch cubes
- 2 pounds boneless beef chuck shoulder
- 1 cup dry red wine
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped carrot
- 1/4 cup finely chopped celery
- 1 tblspn snipped parsley
- 1 tspn salt
- 3 whole peppercorns, slightly crushed
- 1/2 tspn dried thyme, crushed
- 1 bay leaf
- 1 clove garlic, minced
- 2 tblspn cooking oil
- 1/3 cup beef broth
- 15 small whole onions (boilers)
- 1 cup sliced carrots
- 1 cup sliced fresh mushrooms
- salt and pepper
- 3 tblspn all-purpose flour
- 1/4 cup beef broth
- 4oz chicken livers, halved
Thanksgiving Turkey

Roasted turkey for holiday dinners
- 1 10-pound turkey (neck & gizzards reserved)
- 2 T kosher salt
- 1 head of garlic, halved through its equator
- 4 sprigs of fresh oregano
- 4 sprigs of fresh thyme
- 1 lemon, quartered
- 1 onion, peeled and quartered
- 1 fennel bulb, quartered
- 1/4 C picked fennel fronds
- 8 T (1 stick) unsalted butter
- 1/4 C chicken stock or turkey stock or water
Grilled Pork Chops With Tangy Peach BBQ Sauce

Grilled pork chops are a nice alternative to chicken breasts
- For the pork chops:
- 2 tablespoons olive oil
- 2 tablespoons brown sugar
- 2 teaspoons chili powder
- 2 teaspoons salt
- 1 teaspoon black pepper
- 6 10-ounce pork chops (1 inch thick)
- For the tangy peach BBQ sauce:
- 1 cup barbecue sauce
- 1 ripe peach, peeled and diced
- 2 tablespoons apple-cider vinegar
- 1 tablespoon water
Savory Fish Stew

In large pot cook bacon crisp
- 3 strips bacon, chopped
- 1 cup chopped onions
- 1 cup chopped green pepper
- 1 cup carrots, cut in 1/2 inch pieces
- 1 cup celery cut in 1/2 inch pieces
- 1-1/2 pound codfish fillets (cut in 1-1/2 inch pieces)
- 1 can (16oz) whole tomatoes, crushed
- 3 cup chicken broth
- 1/2 cup dry white wine
- 1-1/2 tblspn worcestershire sauce
- 1 tspn salt
- 3/4 tspn basil, crushed
- 3/4 tspn rosemary crushed
- 1/4 tspn thyme crushed
- 1/2 tspn chopped garlic
- 1 bay leaf
Burrito Mix

Cube round steak lightly brown in small amount of oil
- Steak
- Cooking oil
- 1 can diced ortega (?)
- 1 can tomato sauce
- 2 cans water

Holidy Brie En Croute

To soften cranberries, in a bowl mix dried cranberries and 1/2 cup hot water
- 1/2 package (17.3-oz) Pepperidge Farm Frozen Puff Pastry Sheets (1 sheet)
- 1 egg
- 1 tablespoon water
- 1/2 cup apricot preserves OR seedless rasberry jam
- 1/3 cup dried cranberries, softened
- 1/4 cup toasted sliced almonds
- 1 Brie cheese round (about 1 pound)
- Pepperidge Farm Water Crackers
Creamy Mashed Potatoes

Place potatoes and 2 1/2 tablespoons salt in large pot
- 5 lbs white or yukon gold potatoes, peeled and cut into 2 inch chunks
- 2 1/2 tablespoons plus 1 teaspoon kosher salt
- 12 tablespoons unsalted butter, cut into pieces, at room temperature
- 1/2-3/4 cup heavy cream
- 1/4 teaspoon ground nutmeg
- 3/4 teaspoon black pepper
Chimichito

- 4 cups cooked chicken, shredded
- 1/2 white onion, chopped
- 1-4oz can diced green chilies
- 1 cup picante sauce
- 1 cup enchilada sauce
- Shredded cheddar cheese

- 4 flour tortillas, burrito size

- 3 cups red burgundy (1 750-ml bottle)
- 2 tablespoons cognac
- 2 onions, sliced
- 2 carrots, sliced
- Sprig of parsley

- 10 black peppercorns
- 1 teaspoon salt
- 2 pounds beef chuck, cut in 2-inch cubes

- 1/4 pound slab bacon, cut in cubes
- 2 onions, chopped coarsely
- 3 tablespoons flour
- 1 cup beef broth
- 1 tablespoon tomato paste

- 1 pound mushrooms, sliced
