Diane's Crock Pot Baked Beans

Cut bacon in chunks- fry until lightly cooked (not crisp)
- 1 tall can Van Camps Pork and Beans (3 pounds-5oz) do not drain
- 1 (14-1/2oz) can kidney beans, drain well
- 1 (14-1/2oz) can French Cut Green Beans, drain well
- 1 (14-1/2oz) can Garbanzo beans, drain well
- 1 large red onion
- 1 pound bacon
- 1 ring Polish Sausage (Yoeska Kielbasa)
- 3/4 cup brown sugar
- 1 cup spicy hot BBQ sauce (We use Bulls Eye Raging Bull)
Penne Mozzarella

Cheese melts fast, don't need to use as many tomatoes
- 1 2/3 cups uncooked penne
- 3 tbsp. olive oil
- 1 pint grape tomatoes, halved
- 1 tsp. minced garlic
- f1/2 cup skim mozzarella, cubed
- 1 1/2 cups bagged baby spinach
The Meatball Shop's Classic Beef Meatballs

Use these classic meatballs in your favorite sandwich!
- For the sauce:
- 2 tablespoons olive oil
- 2 pounds 80% lean ground beef
- 1 cup ricotta cheese
- 2 large eggs
- 1/2 cup bread crumbs
- 1/2 cup chopped fresh parsley
- 1 tablespoon chopped fresh oregano or 1 teaspoon dried
- 2 teaspoons salt
- 1/4 teaspoon crushed red pepper flakes
- 1/2 teaspoon ground flakes
- 1/2 teaspoon ground fennel
- 4 cups classic tomato sauce
- 1/4 cup olive oil
- 1 onion, finely diced
- 1 bay leaf
- 1 teaspoon chopped fresh oregano or 1/2 teaspoon dried
- 2 garlic cloves, roughly chopped
- 2 teaspoons salt or to taste
- 2 tablespoons tomato paste
- Two 26-ounce boxes Pomi Chopped Tomatoes or two 28-ounch cans whole plum tomatoes, chopped with their liquid
Potato Cheese Casserole

Combine chicken soup, milk, 1/2 cup cheese, potatoes, onion, salt, and pepper- mix
- 1 can (10-1/2oz) cream of chicken soup
- 3/4 cup milk
- 1 cup (4oz) shredded process american or cheddar cheese
- 1 package frozen hash browns potato
- 2 tblspn finely chopped onion
- 1-1/2 tspn salt
- Dash of pepper
- 1 tblspn butter or margarine
- 1/2 tspn minced parsley
Cheddar Salmon Quiche

Crust: Transfer to ungreased 9 inch pie plate or quiche dish
- Crust:
- *Can use a boxed crust mix*
- 1 cup all purpose flour
- 1/4 tspn salt
- 3 tblpns cold butter
- 3 tblspns shortening
- 1/4 cup milk
- Filling:
- 1 can (14-3/4oz) salmond, drained, bones, and skin removed
- 1 cup (4oz) shredded cheddar cheese
- 1/4 cup chopped green pepper
- 1/4 cup chopped onion
- 1 tblspn all-purpose flour
- 1/2 tspn salt
- 1/8 tspn pepper
- 3 eggs, beaten
- 1-1/4 cup milk
Mexican Pizza

- 1 8" pita
- 2 tbsp. salsa
- 1/2 cup precooked chicken breast strips
- 2 tbsp. sliced black olives
- 1/3 cup shredded low-fat cheddar chease
- 1 tbsp. cilantro, chopped
The Best Chicken/Egg Salad

- 6 hard boiled eggs, peeled
- 2 ribs of clelery, diced fairly small (about 1/2 cup)
- 1/3 cup mayonnaise
- 2 cups deli-roasted chicken, shredded
- Freshly ground pepper to taste
- 2 teaspoons curry powder
Chocolate 'Cup' Cake

- 8 oz. butter
- 8 oz. dark chocolate, chopped
- 3/4 cup sugar
- 3/4 cup flour
- 4 eggs
- 1 tsp. sea salt
- 1 tsp. orange zest
- Whipped cream or vanilla ice cream, for serving
Lasagna Spirals

- 1 teaspoon olive oil
- 10 lasagna noodles
- 1 pound ricotta cheese
- 1 10-ounce package chopped frozen spinach, thawed (squeeze out water)
- 1 cup mozzarella cheese, shredded
- 6 basil leaves, chopped
- 1 egg, lightly beaten
- 1 garlic clove, minced
- 1/2 teaspoon each salt and pepper
- 4 cups tomato sauce
- 1 cup gated Parmesan cheese
Banana Split Dessert

- 1/2 cup melted butter
- 2 cup graham cracker crumbs
- 2 eggs
- 2 cup powdered sugar
- 3/4 cup soft butter
- 1 tspn vanilla
- 1-2oz can crushed pineapple well drained
- 4 medium bananas sliced
- 9oz dessert topping (La Creme or Cool Whip)
- 1/2 cup pecans
- 1-4oz jar maraschino cherries
