Potato Salad

Closest to my mom's potato salad
- 6 medium white potatoes or Yukon golds, about 2 1/2 to 3 pounds, quartered
- 3 tablespoons white vinegar
- 2 large celery stalks, diced
- 6 green onions, diced
- 5 hard boiled eggs, peeled
- 1 1/2 cups Miracle Whip or mayonnaise
- 1 tablespoon yellow mustard
- 1 1/2 teaspoons celery seed
- kosher salt and freshly ground black pepper
- paprika for garnish
Snikerdoodles

To turn these into drop cookies, skip the chilling and sprinkle the dropped dough with the sugar and cinnamon
- 1/2 cup margarine or butter
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1 egg
- 1/2 teaspoon vanilla
- 1/4 teaspoon baking soda
- 1/4 teaspoon cream of tartar
- 2 tablespoons sugar
- 1 teaspoon ground cinnamon
Lemon Souffle

- 1/4 cup lemon juice

Artichoke Dip

- 1 clove garlic, finely minced
- 1 teaspoon onion, grated
- 1 cup mayonnaise
- 1/4 teaspon cayenne
- 2 tablespoons parmesan cheese grated
- Salt, pepper
- 1 can artichokes hearts, drained (14 oz) Plain canned NOT marinated

Easy Granola

Wholesome toss-and-bake mix
- 4 Cups Old-fashioned rolled oats (not quick cooking)
- 1 Cup Sliced Almonds
- 1/2 Cup Shredded Coconut (preferably unsweetened)
- 1/4 cup Unsalted Pepitas (hulled pumpkin seeds) or shelled sunflower seeds
- 1/2 Cup Pure Maple Syrup
- 2 Tablespoons Canola Oil
- 1/2 Teaspoon Kosher Salt
- 1 Cup Dried Fruit (such as cherries, cranberries, raisins, or currants)
Green Beans with a Twist

- 1 Package Frozen French-style Green Beans (16 oz)
- 1 Cup Fresh Mushrooms, sliced
- 2 Tbs Butter or Margarine
- 1/2-1 Full Envelope Ranch Salad Dressing Mix
- 4 Bacon Strips, cooked & crumbled (opt.)
Con Queso Rice

- 1 teaspoon salt

- 1 pound cottage cheese

- 1 11oz can mandarin oranges, drained
- 1 / cup halved maraschino cherries
