Seven-Layer Dip

This recipe is very flexible
- 1 Container Sour Cream, 8 oz
- 1 Container Guacamole, 16 oz
- Mild Taco Sauce, sprinkle liberally
- 1 Taco Seasoning Packet
- 1 Cup Cheddar Cheese, shredded
- 1/2 Onion, diced
- 1/2 Tomato, diced
- 1 Small Can Sliced Olives, 4 oz
Prime Rib Roast

Roasts are more easily carved if permitted to 'set' in warm place 15 minutes after removal from oven
- Prime Rib.
- Season: Roast with salt and pepper.
- Place: fat side up open roasting pan
- Insert: Meat thermometer into the thickest part, make sure it does not rest on bone. Do not add water. Do not cover or wrap in foil.
- Roast: in a slow over (325degrees) to desired doneness. The meat thermometer will register For rare: 140 degrees For medium: 160 degrees For well done: 170 degrees.
Au Gratin Potatoes

Boil Potatoes: heat 1 inch salted water (1/2 teaspoon salt to 1 cup water) to boiling
- 2 pounds potatoes (about 6 medium)
- 1 medium onion, chopped (about 1/2 cup)
- 1/4 cup margarine or butter
- 1 tablespoon flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups milk
- 2 cups shredded natural sharp Cheddar cheese (about 8 ounces)
- 1/4 cup fine dry bread crumbs, paprika (optional)
Lemon-Raspberry Mousse Squares
