Lemon Mascarpone Icebox Cake

- 3 Cups Trader Joe's chilled heavy cream
- 1 Jar Trader Joe's Lemon Curd, divided
- 1/4 Cup granulated sugar
- 1 Cup Trader Joe's mascarpone cheese (about 9 oz) at room temperature
- 1 Box Meyer Lemon cookie thins
- Thinly sliced lemon, fresh sliced berries (optional for garnish)
- Special equipment: 9x4 Loaf Pan or 9 inch springform pan
Garlic Chicken Penne

- 16 oz. uncooked penne pasta
- 3 cups frozen sugar snap peas
- 1 or 2 package (1.6oz each) garlic-herb or pesto sauce mix

No Mayo Tuna Sandwich

One small change makes this the perfect sandwich - really
- 1 small can tuna
- 2 About 2 tablespoons mustard, your choice - reg, dijon, grainy, spicy etc
- 2 slices whole wheat bread - it tastes better and is better for you
- Thinly sliced tomato - enough to cover a piece of bread
- Thinly sliced cucumber - enough to cover a piece of bread
- Alfalfa sprouts - enough to cover a piece of bread, and don't skip this part, they really add to the flavor
- Fresh ground pepper

- 1 onion, chopped

- 2 cups flour
