  • 3-5 Pound Pork Shoulder or Butt
  • 1 t Dried Sage
  • 1 t Dried Rosemary
  • 1 1/2 t Kosher Salt
  • 1/2 t Black Pepper
  • 1 T Brown Sugar
  • 10 Whole Cloves Garlic, peeled but intact
  • 1 T Worcestershire Sauce
  • 1/4 Cup Dijon Mustard
  • 1/4 Cup Honey
  • 1/2 Cup Dried Cranberries (unsweetened preferred but sweetened are okay)
  • 3 Bay Leaves
  • 1 Cup Beer
