- For fish:
- 1/2 cup all-purpose flour
- 1 egg, lightly beaten

- 2 tilapia fillets (about 3 to 4 ounces each)
- For salsa:
- 1 cup finely chopped fresh pineapple
- 1 tablespoon minced red onion
- 1/2 jalapeno, seeds removed, minced
- 1/4 cup minced cilantro
- Salt and pepper

These taste exactly like pancakes that are slathered with maple syrup and butter
- 1 1/2 cups melted butter (3 sticks)
- 2 cups sugar
- 2 large beaten eggs, any brand (just whip them with a fork)
- 1/2 cup maple syrup***
- 4 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon vanilla
- 4 cups flour (not sifted)
- 1/2 cup white sugar for coating the dough balls
- To measure maple syrup, first spray the inside of measuring cup with Pam so that the syrup won't stick to sides of cup.

Gluten-free nutrition-filled cookies
- 2 1/2 Cups gluten-free rolled oats
- 1 1/2 Cups white rice or gluten-free flour
- 1/4 Cup fresh ground coffee or espresso
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 Cup all-natural peanut butter
- 3/4 Cup coconut oil, melted
- 3/4 Cup coconut sugar
- 1/2 Cup vanilla almond milk
- 2 Eggs
- 1 Egg Yolk
- 2 tsp pure vanilla extract
- 1 heaping cup dark chocolate baking chips/chunks

- Shrimp:
- 8 corn tortillas
- 2 Cups arugula, lightly chopped

- 3 cobs of corn
- 3 roma or tomatoes on the vine, sliced in half
- 1 T olive oil
- 2 shallots, finely chopped
- 1/4 C white wine
- Juice of 1 lemon
- 1/2 tsp, each, salt & pepper

- 2 Freshly chopped cilantro
