- 200 grams of dark chocolate (52% cocoa) (7 oz)
- 3 eggs, lightly beaten
- 150 gr caster sugar (5 oz)
- 30 gr plain flour (1 oz)
- 150 gr salted butter (5 oz)
Salmon with Lime-Hoisin Glaze with Crunchy Bok Choy Slaw

1. Place bok choy and next 5 ingredients in a large bowl; toss to combine
- 2 C thinly sliced bok choy
- 1/2 C grated carrot
- 1/2 C sliced red bell pepper
- 2 T rice vinegar
- 1 t dark sesame oil
- 1/2 t Sriracha
- 1/4 C dry-roasted unsalted cashews
- 2 T hoisin sauce (GF)
- 1 T fresh lime juice
- 1 garlic clove, grated
- 4 (6 oz) salmon fillets (about 1” thick)
- 1/4 t kosher salt
- Cooking spray
- 2 C hot cooked brown rice

- 2/3 cup butter
- 5 ounces unsweetened, best-quality French chocolate
- 2 teaspoons vanilly
- 4 eggs
- 1/2 teaspoon salt
- 2 cups sugar

Kickin' Chicken Nuggets

Heat oven to 400 degrees. Place pita chips and parmesan in food processor and pulse til coarsely ground
- 1-6 oz. bag spicy pita chips (Ex. Stacy's TexasKana Hot)
- 1/2 cup grated parmesan
- 1/2 cup flat-leaf parsley, finely chopped (optional)
- 1 egg
- 1 1/2 pounds chicken cutlets, cut into 3 inch pieces
- 1 cup sour cream
- 4 scallions, trimmed and chopped
Speedy Sesame Snow Peas

Goes well with Macadamia nut-crusted tilapia with pineapple salsa
- 1 cup snow peas
- 1 teaspoon unsalted butter
- 1/2 teaspoon sesame seeds
- Salt and pepper
Baked Beef Stew

Mix all this up at once and stir good and put it in casserole and cover
- 2 pounds cubed stew meat
- 2 cups chopped celery
- 2 cups chopped carrots
- 2 cups or 1 can steamed tomatoes
- 1 cup chopped cabbage
- 1 large onion, chopped
- 1 cup water
- 2 slices bread torn up
- 2 tblspn minute tapioca
- 2 tspn salt and a little pepper
- Dash of worcestershire sauce
- 1/4 cup catsup
Meat Loaf with Peppers + Mushrooms

- 2 pounds ground round
- 1 tablesopoon butter
- 1 cup finely chopped onion
- 1 cup finely chopped bell pepper
- 1 1/2 cup diced mushrooms
- 1/2 cup finely chopped parsley
- 1 cup fine breadrumbs
- 1/3 teaspoon all spice
- 1 egg slightly beaten
Seven Minute Frosting

- 1 1/2 cups sugar

- 1 teaspoon cream of tartar

Maple Teriyaki Salmon Fillets

- 1/3 cup apple juice
- 1/3 cup maple syrup
- 3 tblspns soy sauce
- 2 tblspns finely chopped onion
- 2 garlic cloves, minced
- 2 salmon fillets (about 2 pounds)
Garlic Mashed Red Potatoes

These creamy garlic mashed potatoes are so good, you can serve them plain--no butter or gravy is needed
- 2 1/2 pounds red potatoes (about 8 medium), quartered
- 3 garlic cloves, peeled
- 2 tablespoons butter OR stick margarine
- 1/2 cup fat-free milk, warmed
- 1/2 teaspoon salt
- 1/4 cup grated Parmesan cheese
