Rhubarb Bars

Crust: Blend and press into 9x13 inch pan
- Crust:
- 1 cup flour
- 5 tblspn powdered sugar
- 1/3 cup oleo
- Topping:
- 1-1/2 cup sugar
- 1/4 cup flour
- 1/2 tspn salt
- 2 beaten eggs
- 2 tblspn lemon juice
- 2 cup chopped rhubarb
Peanut Butter Cookies

For double the peanut flavor, add 3/4 cup of chopped peanuts to the dough
- 1/2 cup margarine or butter
- 1/2 cup peanut butter
- 1 1/4 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup pakced brown sugar or 1/4 cup honey
- 1 egg
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla

Garden-Fresh Spaghetti Sauce

- 4 cups sliced fresh mushrooms (=2-6oz presliced containers)
- 3 medium carrots, coarsley chopped
- 1 cup chopped celery (=3 stocks)
- 1 cup chopped onion
- 1/2 cup chopped green pepper > (2-5oz Tri pepper)
- 1/2 cup chopped sweet red pepper > (2-5oz Tri pepper)
- 4 garlic cloves, minced
- 1/4 cup vegetable oil
- 2 cans (28oz each) crushed tomatoes
- 2 cans (15oz each) tomato sauce
- 1 can (12 oz) tomatoe paste
- 1 cup beef broth
- 2 teaspoon dried oregano
- 1 1/2 teaspoon brown sugar
- 1 teaspoon salt

- 1 pound bacon, cooked and crumbled

The Swallow's Pork and Tomatillo Stew

Requires beer and jalapenos
- 1/4 cup vegetable oil
- 8 large cloves garlic, peeled
- 2 pounds lean pork, cut in cubes
- Salt
- Pepper
- 1 bottle dark beer
- 12 ounces orange juice
- 1 pound tomatillos, quartered
- 1 pound Roma tomatoes, peeled and chopped
- 2 large onions, coarsely chopped
- 1 bunch cilantro, chopped
- 2 jalapeno peppers, chopped
- 1 14oz can black beans
- Juice of 1 lime
- 1 cup sour cream
Spiced Carrot Cake

Heat oven to 350 degrees. grease and flour two 9 inch round layer pans
- 2 2 2 cups dark brown sugar, packed
- 4 4 4 eggs
- 2 2 2 cups flour
- 2 2 2 teaspoons baking soda
- 2 2 2 teaspoons cinnamon
- 3/4 3/4 3/4 teaspoon salt
- 1-1/2 1-1/2 1-1/2 cups vegetable oil
- 2 2 2 cups coarsely grated carrots
- 1 1 1 cup coarsely chopped walnuts

Cheesecake Berry Sauce

Combine the all of the berries in a large bowl and stir gently to combine
- 1 lb fresh strawberries, hulled and thinly sliced
- 6 oz (1 dry half pint) fresh raspberries
- 6 oz (1 dry half pint) fresh blueberries
- 6 oz (1 dry half pint) fresh blackberries
- 1 tablespoon fresh lemon juice, from 1 lemon
- 3/4 cup sugar
High Protein GF Brownies

- 1/3 cup TJ's Dark Chocolate Covered Espresso Beans
- 1 can TJ's Organic Black Beans, drained and rinsed
- 3 TJ's Large Eggs
- 3 Tbsp TJ's Grapeseed Oil
- 1 tsp TJ's Vanilla Extract
- 3/4 cup TJ's Organic Sugar
- 1/4 cup TJ's Unsweetened Cocoa Powder
- 1 tsp TJ's Baking Powder
- TJ's Canola Oil Spray
Zucchini Casserole

Boil onion and squash 5 minutes--drain well
- 6 cups sliced zucchini
- 1/2 cup chopped onion (or more if you want)
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded carrots
- 1 box stove top stuffing (usually chicken or just herb style)
