Put giblets, vegetables and salt in 3 quart saucepan over high heat iwht just enough water to cover
- 1 package neck, heart and gizzards=giblets*
- 1 medium carrot, thickly sliced*
- 1 medium onion, thickly sliced*
- 1 medium celery rib, thicly sliced*
- 1/2 teaspoon salt*
- 1 package turkey liver*
- 3 tablespoons fat from poultry drippings
- 1/4 cup all-purpose flur
- 1/2 teaspoon salt
- *Cook 1 hour
Fabio Viviani's Italian Wedding Soup

Ground beef, panko bread crumbs, and eggs make for delicious meatballs in this warm soup
- 1 lb. ground beef (80/20)
- 2 ea. eggs
- 1/3 cup panko bread crumbs
- 3 Tbsp. parmesan cheese, grated
- 3 quarts chicken broth
- 3 cups fresh baby spinach
- 1 cup carrots, diced
- 1 cup yellow onion, diced
- 1 cup celery, diced
- 2 cups orzo pasta
- 1/2 cup (to taste) extra virgin olive oil
- salt and pepper to taste
Blackberry Crumb Cake

Easy and delicious
- For the Crumb Topping:
- 1/2 C Pecans
- 1/3 C Brown Sugar, firmly packed
- 1/4 C All-Purpose Flour, spooned and leveled
- 2 T Cold Unsalted Butter
- For the Cake:
- 1/2 C (1 stick) Cold Unsalted Butter, cut into pieces, plus more for the pan
- 2 C All-Purpose Flour, spooned and leveled
- 1 C Granulated Sugar
- 2 t baking Powder
- 1 t Kosher Salt
- 1/2 t Ground Cinnamon
- 2 Large Eggs
- 1 C Whole Milk
- 1 t Pure Vanilla Extract
- 1 lbs. Fresh Blackberries (aout 3 1/2 Cups)

- 4 boneless, skinless chicken breasts
- 6 cups salad greens
- 1 cup sliced strawberries or kiwi
- 1 mango peeled, pitted and sliced

Peanut Butter Melts

PBJ snack: Spread jam on one cookie and stack another on top
- 1 cup melted butter (2 sticks)
- 2 cups white sugar***
- 2 teaspoons vanilla
- 1/8 cup molasses (2 tablespoons)
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup peanut butter (either smooth or crunchy)
- 2 beaten eggs (just whipe them up with a fork)
- 2 1/2 cups flour (no need to sift)
- If yo ulike a sweeter cookie, add 1/2 cup more of sugar or roll the dough balls in sugar before baking
