Berry Shortcake Muffins

1 Heat oven to 400°F. Place paper baking cup in each muffin cup; spray inside of paper cups with cooking spray
- 2 cups Original Bisquick® mix
- 1/3 cup sugar
- 2/3 cup whipping cream
- 2 tablespoons melted butter
- 1 egg
- 3/4 cup diced fresh strawberries
- 3/4 cup fresh blueberries*
- Powdered sugar, if desired
Swedish Sailor’s Beef and Potato Casserole

Preheat oven to 275ºF. Season beef with salt and pepper on both sides and dredge with flour
- 1 1/2 pounds bottom round steaks, 1/4-inch thick
- Salt and coarse black pepper
- Flour, for dredging
- 2 tablespoons EVOO – Extra Virgin Olive Oil, divided
- 4 tablespoons butter, divided
- 2 large or 3 to 4 medium onions, sliced
- 1 large bay leaf
- 2 tablespoons fresh thyme, chopped
- 2 pounds or 4 large starchy potatoes, peeled and thinly sliced
- 1 bottle warm lager (light colored) beer
- Chopped flat-leaf parsley
- Chopped cornichons or bread-and-butter pickles
Daddy Wu’s Chicken

In a plastic bag, add chicken and marinade ingredients
- For the marinade:
- 2 pounds chicken breast, cut into 1-inch cubes
- 1 tablespoon soy sauce
- 2 tablespoon sake, xiao shing wine or dry sherry
- 1 teaspoon grated ginger
- 1 teaspoon grated garlic
- 2 tablespoons oyster sauce
- 1 teaspoon sesame oil
- 1 1/2 cups jasmine rice
- 3 cups cold water
- 3 eggs, lightly beaten
- 1 cup flour
- 1/4 cup cornstarch
- For Daddy Wu’s Sauce:
- 2 tablespoons canola oil
- 1/2 red onion, sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup ketchup
- 3 tablespoons brown sugar
- 1 teaspoon sake
- 1 teaspoon sesame oil
- 2 tablespoons oyster sauce
- 1/4 cup chicken broth
- 1/4 teaspoon ginger, grated
- Zest and juice of 1 lemon
- 3 scallions, cut on a bias
Pork Chop Marinade

- 1/2 c. lemon juice
- 1/2 c. soy sauce
- 1/2 c. salsa (I used mild)
- 2 Tablespoons minced fresh garlic

- 1 cup beer
- 1 envelope Sazón GOYA® with Coriander and Annatto
- 1 cup orange juice
- 1 tbsp. Minced Garlic
- 2 tbsp. brown sugar
- 1 boneless pork shoulder or butt roast (about 4 lb.)
- 4 tsp. GOYA® Adobo All-Purpose Seasoning with Pepper, divided
- 2 sprigs fresh rosemary
- 2 lb. potatoes, cut into 2-inch chunks
- 2 lb. carrots, cut into 2-inch chunks
