Butterfinger Cupcakes

Prepare cake mix per manufacturers instructions
- 1 box of cake mix. ” I used orange flavored cake mix for these. It just gives the butterfinger cupcake and extra little kick in the cupcake
- 3 eggs
- 1/3 cup oil
- 1 and 1/4 cup water
- cupcake liners
- cupcake pan
- cake decorators icing
- large baggie
- approximately 10 butterfinger miniature candies
- mallet or rolling pin to crush the butterfingers.
Caramel Apple Pie

Mix the pie crust mix and water
- 2 cups just-add-water pie crust mix for six turnovers
- 1/3 cup plus 1 tablespoons cold water
- 2 cups baking apples peeled and thinly sliced
- 1/2 cup good quality caramel ice cream topping
- 2 tablespoon cornstarch
Boston Cream Pie Cupcakes

Prepare cake mix following cupcake directions
- 1 box (18.25 oz) yellow cake mix
- 1 box (3.4 oz) instant vanilla flavored pudding mix
- 1 1/2 cups heavy whipping cream
- 1/2 cup confectioners’ sugar
- 1/2 cup milk
- 1/4 cup sour cream
- 1 batch Sinful Chocolate Ganache (see below)
Chili Skillet

In a large skillet over medium heat, cook beef, onion, green pepper, and garlic until meat is no longer pink; drain
- 1 pound ground beef
- 1 cup minced onion
- 1/2 cup finely chopped green pepper
- 1 garlic clove, minced
- 1 can (16 ounces) kidney beans, rinsed and drained
- 1 cup tomato juice
- 1/2 cup water
- 4 teaspoons chili powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 cup uncooked long grain rice
- 1 cup canned or frozen corn
- 1/2 cup sliced ripe olives (optional)
- 1 cup shredded cheddar or Monterey Jack cheese
- green onions, thinly sliced (optional)
BAILEYS IRISH CREAM BROWNIE PIE

Line a 9 inch pie pan with the pastry, forming a high edge
- Pastry for a 1-crust pie
- 1/2 cup (1 stick) unsalted butter
- 2 (1 ounce) squares unsweetened chocolate
- 2 eggs
- 1 cup sugar
- 2 tbsp Irish cream liqueur
- 1 tsp vanilla extract
- 1/3 cup flour
- 1/4 tsp salt
- 1 cup chopped walnuts or pecans
Minnie and Mickey Mouse Oreo Cookie Pops

- 12 double stuffed Oreos, plus a few extra in case they break
- 12 mini Oreos
- 6 ounces vanilla almond bark (4 squares)
- Pink and red sugar crystal sprinkles
- Pink mini conversation hearts, for Minnie bows (thinnest you can find, I used Ferrara Pan brand)
- 12 8 inch sucker sticks (optional)

- 1 egg
- 1 1/8 cups milk
- 1 teaspoon vanilla

"Quickie" Marinated Cucumbers

In a medium bowl, combine hot water, sugar, and Italian dressing
- 1/4 cup hot water
- 1/3 cup sugar
- 1 (8-ounce) bottle Italian dressing
- 3 medium-sized cucumbers, cut into 1/8-inch slices
- 1 medium-sized onion, thinly sliced
Durango Potato Casserole

Place potatoes in large saucepan and cover with water
- 2-1/2 pounds potatoes (about 8 medium), peeled and cut into 1-inch cubes
- 8 thick-sliced bacon strips
- 1 can (14-1/2 ounces) diced tomatoes and green chilies, drained
- 3 cups (12 ounces) shredded Mexican cheese blend
- 4 green onions, chopped
- 1/3 cup chopped green pepper
- 1/3 cup chopped sweet red pepper
- 1-1/2 cups reduced-fat mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon seasoned salt
