1.To prepare cake: Preheat oven to 350°F
- Cake:
- 1 (20-ounce) can crushed pineapple
- 2 cups whole-wheat pastry flour, (see Ingredient Note)
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 3 large eggs
- 1 1/2 cups granulated sugar
- 3/4 cup nonfat buttermilk, (see Tip)
- 1/2 cup canola oil
- 1 teaspoon vanilla extract
- 2 cups grated carrots, (4-6 medium)
- 1/4 cup unsweetened flaked coconut
- 1/2 cup chopped walnuts, toasted (see Tip)
- Frosting
- 12 ounces reduced-fat cream cheese, (Neufchâtel), softened
- 1/2 cup confectioners' sugar, sifted
- 1 1/2 teaspoons vanilla extract
- 2 tablespoons coconut chips, (see Ingredient Note) or flaked coconut, toasted
Caramel Pear Cake

Prepare cake mix according to package instructions and bake in broiler-proof 9x13-inch baking dish
- 1 (18.25-ounce) package spice cake mix
- 2 fresh pears, pared, halved, cored, and thinly sliced
- 1/2 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 2 tablespoons water
- 1/4 cup chopped almonds
- 1/4 cup melted butter
Master Mix (Copycat Bisquick)

Sift dry ingredients together
- 5 pounds all-purpose flour
- 2 1/2 cups instant non-fat dry milk
- 3/4 cup double acting baking powder
- 2 tablespoons cream of tartar
- 3 tablespoons salt
- 1/2 cup sugar
- 4 2/3 cups (2 pounds) solid vegetable shortening
Crumb Boss Bread Pudding

In bowl combine cream, milk, eggs, sugar, brandy and vanilla
- 3 Cups Cubed Stale Bread
- 2 T Melted Butter
- 1 cup Heavy Cream
- 1 Cup Milk
- 5 Eggs
- 1/2 c Sugar
- 2 T Brandy (optional)
- 1 T Vanilla X
LAZY DAISY CAKE

1. Place a rack in the center of the oven, and preheat the oven to 350 degrees
- Cake:
- Butter or shortening and flour for prepping the pan
- 1 / 2 cup (1 stick) unsalted butter, at room temperature
- 2 cups granulated sugar
- 3 large eggs
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- Topping:
- 1/2 cup (1 stick) unsalted butter
- 1 cup light brown sugar, firmly packed
- 1/3 cup heavy cream
- 1 1/2 to 2 cups shredded sweetened coconut
- 1 teaspoon vanilla extract
- Pinch of salt (see Cake Notes)

- 2 3/4 cups flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 1/2 cups sugar
- 1/2 cup butter, softened
- 1 egg
- 1/3 cup lemon juice
- 1 tsp. grated lemon zest

Southwestern Grilled Pork Chops with Peach Salsa

1 Heat gas or charcoal grill
- 3 ripe medium peaches, peeled, chopped (about 1 1/2 cups)
- 1/4 cup finely chopped red bell pepper
- 2 tablespoons finely chopped red onion
- 1 tablespoon chopped fresh cilantro
- 2 teaspoons packed brown sugar
- 2 teaspoons fresh lime juice
- 1/4 teaspoon finely chopped serrano or jalapeño chile
- 1 tablespoon chili powder
- 4 bone-in pork loin chops, 1/2 inch thick (4 oz each)
