Creamy Chicken Manicotti

Preheat oven to 350 degrees F
- 1 (8-ounce) package manicotti shells
- 2 (8-ounce) containers soft cream cheese with chives and onions
- 2/3 cup milk
- 1/4 cup grated Parmesan cheese
- 1 (10-ounce) package refrigerated cooked and sliced chicken or 2 cups chopped cooked chicken
- 1 (10-ounce) package frozen chopped broccoli, thawed and drained
- 1 (4-ounce) jar diced pimientos, drained
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
Salami Soup/Sopa De Salchichon

Take the fresh corn on the cob and chop them up
- 6 Ounces Spicy Salami, chopped.
- 2 Potatoes,cubed
- 1 Tablespoon Sofrito
- 1/2 Teaspoons Oregano Powder
- 1/4 Cups Tomato Sauce
- 2 Teaspoons Tomato Chicken Bouillon
- 1 Tablespoon beef bouillon
- Thin cut spaghetti for soup optional
- 1 Sazon con culantro y achiote
- 8 Tablespoons Olives
- Cilantro
- 7 Cups water
- 1 Tablespoon canola oil
- 1/2 Teaspoons Garlic Powder
- 1/2 Teaspoons Onion powder

PESKY PETE'S PRACTICALLY PERFECT HOT DOG SAUCE

Put all ingredients, as listed, into blender
- 1 (6 oz) can tomato paste
- 4 tomato paste cans of water
- 1/2 cup ketchup
- 1 TB Worcestershire
- 2 TB Heinz 57 Sauce
- 1 TB chili powder
- 1 1/2 tsp cumin powder
- 1/2 tsp garlic salt
- 1/4 cup white vinegar
- 2 TB cornstarch
THE PERFECT COOKED SALAD DRESSING

Stir flour, sugar, salt & mustard together in 2-qt saucepan
- 4 TB flour
- 2 TB sugar
- 1 tsp salt
- 1 tsp dry mustard
- 2 raw egg yolks1
- 1/2 cups milk
- 1/3 cup vinegar
- 1 TB butter or margarine
- 1/2 cup mayonnaise (optional)

- For the Pumpkin Cake:
- 2 cups sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 3 teaspoons pumpkin pie spice
- 1 teaspoon salt
- 2 cups pumpkin puree
- For the Mascarpone Filling:
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon pumpkin spice
- 2 cups mascarpone
- 1 cup pumpkin puree (strained of excess liquid)

- 3 tablespoons corn syrup
- 6 ounces heavy cream
- 12 ounces dark chocolate (chopped into small bits)

Hearty Baked Beans

In large skillet, cook beef and onions over medium heat until meat is no longer pink; drain
- 1 pound ground beef
- 2 large onions, chopped
- 3/4 pound sliced bacon, cooked and crumbled
- 4 cans (15 ounces each) pork and beans
- 1 bottle (18 ounces) honey barbecue sauce
- 1 can (16 ounces) kidney beans, rinsed and drained
- 1 can (15-1/4 ounces) lima beans, rinsed and drained
- 1 can (15 ounces) black beans, rinsed and drained
- 1/2 cup packed brown sugar
- 3 tablespoons cider vinegar
- 1 tablespoon Liquid Smoke, optional
- 1 teaspoon salt
- 1/2 teaspoon pepper
Apples & Chicken

Being careful not to brown, sauté onions in butter in a skillet over medium heat until translucent
- 2 onions, chopped
- 5 T. butter
- 3 apples, peeled, cored and sliced
- 2 lbs. boneless, skinless chicken breasts
- 1 t. salt
- 1/2 t. pepper
- 1-1/4 c. shredded sharp Cheddar or Swiss cheese
- 1/2 c. grated Parmesan cheese
- 1/2 c. dry bread crumbs
- 2 T. applejack or apple cider
