  • 2 onions, chopped
  • 5 T. butter
  • 3 apples, peeled, cored and sliced
  • 2 lbs. boneless, skinless chicken breasts
  • 1 t. salt
  • 1/2 t. pepper
  • 1-1/4 c. shredded sharp Cheddar or Swiss cheese
  • 1/2 c. grated Parmesan cheese
  • 1/2 c. dry bread crumbs
  • 2 T. applejack or apple cider

Step 1

Being careful not to brown, sauté onions in butter in a skillet over medium heat until translucent. Line the bottom of a greased 13"x9" baking pan with apple slices. Arrange chicken over apples; sprinkle with salt and pepper. Top with onion mixture. Combine cheeses with bread crumbs and sprinkle on top. Drizzle with applejack or cider. Bake, covered, at 350 degrees for 30 minutes. Uncover and bake an additional 5 minutes, or until golden on top and chicken juices run clear.

Serves 4.
