Shredded Chicken 'n' Pepper Sandwiches

Place chicken in 3-1/2 or 4-quart slow cooker; add pepper stir-fry
- 1 1/2 pounds chicken tenders
- 1 (1-pound) package frozen pepper stir-fry mix, thawed and drained
- 1/3 cup balsamic vinegar
- 2 tablespoons dark brown sugar
- 1 tablespoon olive oil
- 1/8 teaspoon salt
- 6 bagel squares (see Notes)
- 6 slices provolone cheese
Bubblegum Cupcakes

1. Preheat oven to 350 degrees F
- 1 box white cake mix, plus ingredients on back of box subbing unsweetened applesauce for oil*
- 3 drams bubblegum oil, found HERE
- Pink and teal food gel coloring
- Bubblegum Frosting (recipe & ingredients follow)
- Unhealthy amount of sprinkles, gumballs & Blow-Pops, if desired
Cracker Barrel Grilled Chicken Tenderloins

Cut each chicken breast into strips or use tenderloins pieces
- 4 to 5 chicken breasts, cut into pieces or 12 chicken tenderloins
- 1 (8 0z) bottle Italian Dressing (1 cup)
- 2 teaspoons fresh lime juice (I used bottled)
- 4 teaspoons honey
Garden Vegetable Muffins

Preheat oven to 375°F. Lightly grease muffin pans or fill with muffin liners
- Dry:
- 4 cups flour
- 2 cups sugar
- 4 tsp. baking soda
- 4 tsp. cinnamon
- 1 tsp. salt
- Fruit & Veggie:
- 2 cups carrots, grated
- 2 cups zucchini, grated
- 2 cups Fuji apples, grated
- 1 cup raisins
- 1 cup shredded coconut
- 1 cup pecans chopped, optional
- Wet:
- 6 eggs
- 1 cup vegetable oil
- 1 cup whole milk
- 2 tsp. vanilla extract
Penne Pesto with Chicken

1. Bring large pot of lightly salted water to boil
- 1 large bunch broccoli rabe, trimmed slightly and cut into 1-1/2 inch pieces
- 1 box (16 ounces) penne pasta
- 2 cloves garlic, peeled and sliced
- 1 package (9 ounces) fully cooked grilled chicken strips (such as Perdue Short Cuts), cut into bite-size pieces
- 1 container (7 ounces) Buitoni Reduced-Fat Basil Pesto
Holiday Mini Mint Cookie Cups

1 Heat oven to 350°F. Generously grease 24 mini muffin cups with shortening or cooking spray
- 1 pouch chocolate chunk cookie mix
- 1 1/2 cups butter, softened
- 1 egg
- 8 cups powdered sugar
- 1 teaspoon peppermint extract
- Red and green food color
- 24 hard round peppermint candies, unwrapped
Rice Seasoning Mix

Mix all ingredients and store in an airtight container
- 1 cup sliced almonds, coarsely chopped
- 1/2 cup chicken bouillon granules
- 1/2 cup dried parsley flakes
- 1 tablespoon dried basil
- 1 tablespoon dill weed
- 1 tablespoon dried minced onion
- 1 teaspoon seasoned salt
- 1 teaspoon garlic powder
- 1 teaspoon lemon-pepper seasoning
Rebecca's Black Bottom Icebox Pie

Pulse chocolate wafers in food processor 8-10 minutes or until finely crushed
- 1 (9 ounce) package chocolate wafers
- 1/2 cup butter, melted
- 2/3 cup sugar
- 3 tablespoon cornstarch
- 4 egg yolks
- 2 cups milk
- 2 (4 ounce) bittersweet chocolate baking bars, chopped
- 1 tablespoon dark rum
- 1/2 tsp. vanilla extract
- 2 cups heavy whipping creme
- 1/4 cup sugar
- Garnish: bittersweet chocolate shavings
Lemon Cake with Irish Breakfast Tea Frosting

- 1 box yellow or lemon cake mix
- Water, vegetable oil and eggs called for on cake mix box
- 1 tablespoon grated lemon peel
- 1/2 cup water
- 2 tea bags Irish breakfast tea
- 1 cup sugar
- 1/4 teaspoon cream of tartar
- 1/8 teaspoon salt
- 2 large egg whites
- Lemon slices or wedges, if desired
