Americanized Irish Soda Bread

Preheat oven to 325 F. Grease two 8-by-4-inch loaf pans
- 4 cups all-purpose flour
- 1 cup white sugar
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 eggs
- 1 pint (16 oz.) sour cream
- 1 cup dried currants (okay to use raisins)
- 1 tablespoon caraway seeds (optional)
Pecan Toffee Fudge

Line a 9-in. square pan with foil and grease the foil with butter; set aside
- 1 teaspoon butter
- 1 package (8 ounces) cream cheese, softened
- 3-3/4 cups confectioners' sugar
- 6 ounces unsweetened chocolate, melted and cooled
- 1/4 teaspoon almond extract
- Dash salt
- 1/4 cup coarsely chopped pecans
- 1/4 cup English toffee bits

- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar

- Salt and ground black pepper

Caramel Apple Cupcakes #2

1. Preheat oven to 350 degrees F
- 1 box white cake mix
- 1 bottle Jones Green Apple soda (12 oz)
- 2 apple water flavor enhancers (I used Hawaiian Punch brand’s Green Berry Rush, $1 at Walmart)
- Green food dye, to color cupcakes (if desired)
- Caramel Frosting (recipe and ingredients follow)
- Caramel apple suckers
Creative Carrot Cake Cupcakes

1 Heat oven to 350°F. 2 In large bowl, beat cake mix, oil, water and eggs on low speed 30 seconds
- Cupcakes:
- 1 box carrot cake mix
- 1/2 cup vegetable oil
- 1 cup of water
- 3 eggs
- Add up to three ingredients from the list below:
- 1/2 cup chopped nuts (pecans or walnuts work well)
- 1/2 cup sweetened shredded coconut
- 1/2 cup raisins
- 1/2 cup dark chocolate chips
- 1/2 cup white chocolate chips
- 1 can (8 oz) crushed pineapple in juice, undrained
- Frosting:
- 1 container (1 lb) cream cheese frosting
