Comfort Barbecue Sauce

Lightly brown onion in bacon grease or cook with chopped bacon
- 1 medium onion, finely chopped
- 4 tablespoon bacon grease or 3 slices of bacon, finely chopped
- 1/2 cup Southern Comfort
- 2 cups catsup
- Juice of 1 lemon
- 1/3 cup brown sugar
- 1 teaspoon salt
- 1/2 teaspoon chili pepper
Roasted Chicken with Vegetables

- 1/4 cup lemon juice
- 1/2 teaspoon dried oregano
- 1 teaspoon salt

- 3 1/2 oz bottles red food coloring
- 3 tbsp. cocoa(Hershey's baking cocoa)
- 1/2 cup shortening(Crisco)

- 2 eggs
- 2 1/4 cup flour
- 1 tsp salt
- 1 tsp baking soda
- 1 cup buttermilk
- 1 tsp vanilla
- 1 tsp RICE vinegar(unseasoned one)
Loveless Cafe Meatloaf

Heat skillet over medium heat, add butter and saute onions until clear
- 1 1/2 lb ground chuck or ground round
- 1 egg
- 1 medium onion, chopped
- 1/2 green pepper, chopped
- 1/2 cup uncooked rolled oats
- 2 oz butter, melted
- 1 (16 oz) can crushed tomatoes
- 1 strip bacon
- Salt and pepper to taste
Slow Cooker Beef Stew with Shiitake Mushrooms

In 3 1/2 to 4 quart slow cooker, mix all ingredients except beef
- 12 new potatoes, cut into fourths (1 1/2 pounds)
- 1 medium onion, chopped (1/2 cup)
- 1 bag (8 oz) ready-to-eat baby-cut carrots
- 1 package (3.4 oz) fresh shiitake mushrooms, sliced
- 1 can (14.5 oz) organic diced tomatoes, undrained
- 1 can (10 1/2 oz) condensed beef broth
- 1/2 cup all-purpose flour
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon dried marjoram leaves
- 1/4 teaspoon pepper
- 1 lb beef stew meat, cut into 1/2-inch pieces
Cheese-Stuffed Chicken

Heat oil in large saute pan
- Stuffing:
- 2 Tablespoons oil
- 1 red pepper, diced
- 1 green pepper, diced
- 1 yellow pepper diced
- 1 onion, diced
- 1 tsp salt
- 1 tsp pepper
- 4 oz. cream cheese
- 1/2 c. cheddar cheese, shredded
- 1/2 c. pepper jack cheese, shredded
- 3 chicken breasts cut in half 3/4 of the way to make a pocket for stuffing
- 2 teaspoons each: cumin, salt pepper, garlic powder and chili powder.
Pineapple Icebox Cake

1 In 2-quart saucepan, cook pudding mix, milk and pineapple juice as directed on box
- 2 boxes (6-serving size each) vanilla pudding and pie filling mix (not instant)
- 5 1/4 cups milk
- 3/4 cup pineapple juice
- 2 cans (20 oz each) sliced pineapple, drained
- 1 box (12 oz) vanilla wafer cookies
- 2 cups whipping cream
- 2 tablespoons powdered sugar

- 2 tablespoons olive oil
- 2 cups onions, chopped

- 1 1/2 lbs. stew meat, cut into cubes
- 1 lbs lean chop meat
- 1 large red bell pepper, chopped
- 1 large hot pepper, chopped
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- crushed red pepper, to taste
- 2 teaspoons dried oregano
- 4 cloves garlic, chopped
- 3 cups crushed tomato
- 1/4 cup tomato paste
- 6 cups beef or vegetable stock
- 1 (15-oz.) can red kidney beans
- 1 (15-oz.) can dark red kidney beans
- 1 (15-oz.) can white kidney beans
- 1 (15-oz.) can Great Northern beans
