Arroz con Gandules (Puerto Rican Rice and Pigeon Peas)

Heat the oil in a large saucepan over medium-high flame
- 3 Tablespoons Olive oil
- 1/4 cup Sofrito
- 1 Tablespoon Sazón
- 1 cup Tomato sauce
- 3 cups Stock or water
- 2 cups Rice
- 1 15 oz. can Gandules (pigeon peas), drained
- 1/4 cups pimento-stuffed olives, sliced into rounds
- 1 Tablespoon Capers
- Salt and pepper -- to taste
Bacon, Tomato and Avocado Grilled Cheese

1 Place 1/4 cup cheese on each of 4 bread slices
- 2 cups shredded Cheddar cheese (8 oz)
- 8 slices white or whole wheat bread
- 1 small onion, chopped (1/3 cup)

- 1 medium avocado, pitted, peeled and thinly sliced

Down Home Sweet Potato Casserole

Preheat the oven to 350 degrees
- 2 (14-1/2-ounce) cans mashed sweet potatoes
- 1/2 cup packed dark brown sugar
- 1 cup evaporated milk
- 1/4 cup butter, melted
- 1 large egg
- 3 tablespoons all-purpose flour
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 1/4 cup chopped pecans

- 2 pounds beef stew meat, cut into 1 /2 inch cubes

- 1/4 pound salt pork, cut into small pieces
- 3 cloves garlic, finely chopped
- 1/2 cup finely chopped onion
- 1/2 teaspoon dried oregano leaves
- Pinch ground cumin
- 2 cans (10 1/2 ounce) tomato puree
- 2 tablespoons chili powder
- 1 1/2 teaspoons salt
- Dash pepper
