Chicken Picatta

Lay your bread crumbs on plate and leave your egg in cereal sized bowl
- 2 Chicken Breasts, thinned in half (so you should end up with 4 thin pieces of chicken)
- 1 cup white wine
- 1 cup chicken broth (I didn't add this, but I think it would tame down the lemon just a bit and make more sauce!)
- 1/2 cup freshly squeezed lemon juice (I used 3 lemons)
- 4 Tbsp. Butter, sliced
- 3 Tbsp. Capers
- 1 cup Italian Seasoned bread crumbs
- 1 egg, beaten
- salt and pepper to taste
- pasta of your choice
Glazed Whiteout Cookies

1 Heat oven to 350°F. Shape dough into 36 (1-inch) balls
- 1 roll refrigerated sugar cookies
- 1 cup vanilla creamy ready-to-spread frosting (from 16-oz container)
- 1/2 teaspoon almond extract
- White candy sprinkles or coarse sugar

1. Preheat oven to 350 degrees
- 1 box white cake mix
- 3 egg whites
- 1 1/4 c water
- 1/3 c unsweetened applesauce
- 1 small box sugar free/fat free vanilla pudding mix
- 2 tsp cinnamon extract

L'Angolo Cafe's Strawberry-Coconut Layer Cake

- Cake:
- 3 1/4 cups (13 ounces) cake flour
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1/3 cup milk
- 2/3 cup coconut milk
- 1 cup (2 sticks) butter, softened
- 1 1/2 cups sugar
- 6 egg whites
- 2 teaspoons vanilla extract
- 1 cup chopped fresh strawberries
- 1/2 cup coconut flakes
- Filling:
- 1 1/4 cups finely chopped fresh strawberries
- 1/4 cup sugar
- 1 tablespoon plus 3/4 teaspoon cornstarch
- Frosting:
- 8 ounces cream cheese
- 1/2 cup (1 stick) butter, softened
- 3 cups powdered sugar
- 1 tablespoon milk, or enough to thin frosting to desired consistency
Shortcut Blueberry Muffins

Preheat oven to 400 degrees
- 2 cups pancake and baking mix
- 1/2 cup sugar
- 2/3 cup milk
- 2 tablespoons vegetable oil
- 1 egg
- Zest of 1 lemon
- 3/4 cup fresh or frozen (thawed and drained) blueberries
S'more Pie Pops

Preheat oven to 375°F. Unroll pie crust onto a lightly floured surface
- 1 pie crust
- 4.4 oz Hershey's XL Milk Chocolate Bar
- 2 cups mini marshmallows
- 1 egg white - beaten
- Pinch of flour
Guilt-Free Funfetti Cupcakes

1. Preheat oven to 350 degrees
- 1 box funfetti cake mix (JUST the mix–you do NOT need any other ingredients. No eggs. No water. No oil. Just soda)
- 1 can (12 ounces) diet sprite or 7-up
- Cream Cheese Frosting (recipe and ingredients follow)
- Rainbow sprinkles or jimmies
Pumpkin Pie Fudge

Line 8x8 pan with foil or parchment paper, extending it up and over the pan
- For the fudge:
- 3 C. sugar
- 3/4 C. butter, melted
- 2/3 C. evaporated milk
- 1/2 C. canned pumpkin
- 2 T corn syrup
- 1 tsp. pumpkin pie spice
- 1 (12-ounce) package white chocolate morsels
- 1 (7-ounce) jar marshmallow crème
- 1 tsp. vanilla extract
- For the crust:
- 1 1/4 C. finely crushed gingersnap crumbs
- 2 T. sugar
- 4 T. butter, melted
Pumpkin Muffins (Only 2 Ingredients)

- Optional Items:
- 1 box yellow cake mix
- 1 15 oz. can pumpkin
- 1/2 c. Chopped Walnuts or 1/2 c. Raisins (or a handful of both!)
- 1 1/2 tsp Pumpkin Pie Spice
