Cookie-Peanut-Ice Cream Pizza

Chicken Tortilla Soup #7

Heat oven to 350°. Arrange tortilla strips in single layer on ungreased cookie sheet
- 1 flour tortilla for burritos (from 11-oz package), cut in half, then cut crosswise into 1/4-inch strips
- 2 cans (18 oz each) Progresso™ Recipe Starters™ fire roasted tomato cooking sauce
- 1 1/4 teaspoons ground cumin
- 1 teaspoon chili powder
- 2 cups shredded deli rotisserie chicken
- 1 can (15 oz) black or cannellini beans, drained, rinsed
- Crumbled cojita cheese or shredded Monterey Jack cheese
- Diced or cubed avocado

Seafood Lasagna

1 Heat oven to 350º. Melt butter in 3-quart saucepan over low heat
- 1/2 cup butter or margarine
- 2 garlic cloves, finely chopped
- 1/2 cup Gold Medal® all-purpose flour
- 2 cups milk
- 2 cups Progresso® chicken broth (from 32-ounce carton)
- 2 cups shredded mozzarella cheese (8 ounces)
- 4 medium green onions, sliced (1/4 cup)
- 2 tablespoons capers
- 1 teaspoon dried tarragon leaves
- 1/2 teaspoon lemon pepper
- 9 uncooked lasagna noodles
- 1 cup small curd creamed cottage cheese
- 1 can (6 ounces) crabmeat, drained and cartilage removed
- 1 can (4 ounces) tiny shrimp, drained
- 1/2 cup grated Parmesan cheese

Three bean chili is quick, easy and healthy meal
- GARNISH:
- 3 tablespoons extra virgin olive oil
- 1/2 medium yellow onion, finely chopped, about 3/4 cup
- 1 medium carrot, peeled and cut into 1/4” pieces, about 1/2 cup
- 2 small green and/or yellow zucchini, seeded and cut into 1/4” pieces, about 3 cups
- 2 teaspoons chili powder
- 2 teaspoons minced garlic
- 1 finely chopped chipotle chile, plus 1 teaspoon sauce from 1 can (7-ounce) chipotle chiles in adobo sauce
- 1 (28-ounce) can crushed tomatoes
- 1 (15.5-ounce) can black beans, drained and rinsed
- 1 (15.5-ounce) can pinto beans, undrained
- 1 (15.5-ounce) can red kidney beans, undrained
- 1/2 teaspoon GOYA® Adobo All-Purpose Seasoning with Pepper

- 6 ounce box apricot Jello
- 2 tablespoons sugar

- 1/2 cup chopped celery

The Smokehouse Sausage & Bean Stew

- 3 celery ribs, diced
- 1 large onion, chopped
- 1 pound smoked sausage, cut into 1/2-inch slices
- 1 teaspoon minced garlic
- 1/2 cup pearl barley
- 4 cups chicken broth
- 1/2 cup dried lentils
- 3 cans (16 ounces, each) kidney beans, rinsed & drained
- 1 teaspoon hot pepper sauce
- 1 cup chopped fresh spinach
- 3 medium carrots, diced
Faux-tilla Soup

- 1 can of Mexicorn corn
- Pieces of cooked chicken
- 1/2 jar of sautéed peppers and onions

Refrigerator Layered Salad

In a small bowl, combine mayonnaise, sugar, and curry powder; mix well and set aside
- 1 1/2 cups mayonnaise
- 1 tablespoon sugar
- 1 teaspoon curry powder
- 1 medium head iceberg lettuce, shredded
- 2 large tomatoes, chopped
- 1/2 pound sliced fresh mushrooms
- 1 medium-sized red onion, thinly sliced and separated into rings
- 10 radishes, sliced
- 1 1/2 cups (6 ounces) shredded Swiss cheese
- 1/4 cup real bacon bits
Black Forest Trifle

- 1 4-serving package sugar-free instant chocolate pudding mix
- 2 cups fat-free milk
- 1 pound fresh pitted dark sweet cherries or one 16-oz package frozen unsweetened pitted dark sweet cherries, shaved and well-drained
- 2 cups frozen fat-free whipped dessert topping, thawed
- ~ Unsweetened cocoa powder (optional)
