Beef and Rice Fiesta Bake

Preheat oven to 375 degrees
- 1/2 pound lean ground beef
- Salt and freshly ground black pepper, to taste
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 1/2 cup water
- 2 (14.5 oz) cans diced tomatoes, undrained
- 2 (4.5 oz.) cans chopped green chiles, undrained
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 1/2 teaspoons sugar
- 1 teaspoon dried oregano
- 4 cups cooked long-grain rice (cook per package directions)
- 1 cup fat-tree sour cream
- 1/2 cup sliced green onions, green parts only
- 1/2 cup skim milk
- 3/4 cup reduced-fat sharp cheddar cheese
- Cooking spray

- 2 (12-oz) bags frozen mixed berries/peaches
- 1 box white cake mix
- Approximately 1 can of diet 7-up or other clear soda
- (might need more than 1 can of soda to avoid dry spots)

Kentucky Bourbon Parfaits

In a large bowl, combine pudding mix, milk, and bourbon; whisk until thickened and set aside
- 1 (4-serving size) package instant chocolate pudding and pie filling
- 1 1/2 cups milk
- 2 tablespoons Kentucky bourbon (see Note)
- 1 (8 ounce) container frozen whipped topping, thawed
- 1/2 cup chopped pecans, toasted
- 2 1/2 cups coarsely crushed pecan sandies cookies

- 4 cups of sifted Powder sugar
- 2 tsp of meringue powder
- 3/4 cup of Butter
- 3/4 cup of High ratio shorten if need be you can use crisco but don't use to much water
- 1/2 tsp of Vanilla Flavoring
- 1/2 tsp of Butter Flavoring
