Cheesy Pizza Fondue

In a skillet over medium heat, brown beef with onion; drain
- 1/2 lb. ground beef
- 1 onion, chopped
- 2 8-oz. cans pizza sauce
- 1 T. cornstarch
- 1-1/2 t. dried oregano
- 1/4 t. garlic powder
- 1-1/4 c. shredded Cheddar cheese
- 1 c. shredded mozzarella cheese
- 6 English muffins, toasted and cubed
Prosciutto-Wrapped Chicken Stuffed with Herb Ricotta

Preheat oven to 400ºF. In a bowl, season the ricotta with salt and pepper
- 1/2 cup ricotta
- Salt and pepper
- 3 tablespoons grated Parmigiano-Reggiano
- 1 small clove garlic, grated or chopped
- 1 tablespoon finely chopped flat-leaf parsley
- A few leaves basil, chopped
- A couple sprigs fresh thyme, finely chopped
- 4 small pieces skinless, boneless chicken breast, butterflied
- EVOO – Extra Virgin Olive Oil, for drizzling
- 4 thin slices prosciutto di Parma
- A splash of white wine
- 1 tablespoon butter
Mocha Cream Pie

- CRUST:
- 14 Oreo cookies
- Pinch of salt
- 2 tablespoons unsalted butter, melted
- FILLING:
- 1 tablespoon vanilla extract
- 1 tablespoon instant espresso powder
- 2 cups half-and-half
- 3 ounces semisweet chocolate, chopped
- 1 ounce unsweetened chocolate, chopped
- 1/2 cup plus 1 Tbsp. sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 4 large egg yolks
- 4 tablespoons unsalted butter, at room temperature
- TOPPING:
- 1 cup heavy cream, chilled
- 1 tablespoon confectioners' sugar
Beef Roast w/ Gravy Crockpot

Place carrots & mushrooms in bottom of crockpot
- 1 pound fresh baby carrots
- 1 (4 ounce) can mushrooms, drained
- 1 (3 pound) chuck pot roast
- Garlic powder
- Salt & pepper
- 2 cups beef stock
- 1 package onion soup mix
- 1 (10 3/4 ounce) cream of mushroom soup
- 3 tablespoon beef gravy mix
Fiesta Potato Salad

Cut the potatoes into large chunks and boil them in salted water until they are almost tender, not soft
- 3 pounds new red potatoes
- 1/3 cup chopped green onion
- 1 1/2 cups frozen peas
- 1 1/2 cups canned whole kernel corn, drained
- 1/2 cup red peppers, chopped
- 1 cup mayonnaise
- 4 teaspoons white vinegar
- Salt and pepper to taste
Orange Dream Cake

Preheat oven to 350 degrees
- 1 (18.25-ounce) package orange cake mix
- 1 (4-serving) package orange-flavored gelatin
- 2 eggs
- 1/2 cup vegetable oil
- 1 1/2 cups water
- 4 ounces cream cheese, softened
- 3/4 cup orange juice
- 1 (4-serving) package instant vanilla pudding mix
- 1 tablespoon sugar
- 1 (8-ounce) can crushed pineapple, drained
- 1 (8-ounce) container frozen whipped topping, thawed

Sprinkle pork chops with garlic salt and pepper
- 4 boneless pork loin chops (3/4 inch thick and 6 ounces each)
- 1/4 teaspoon garlic salt
- 1/4 teaspoon pepper
- 2 teaspoons olive oil, divided
- 3/4 pound sliced fresh mushrooms
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1/3 cup white wine or reduced-sodium chicken broth
- 1/4 cup all-purpose flour
- 1 cup reduced-sodium chicken broth
- 2 teaspoons minced fresh tarragon or 1/2 teaspoon dried tarragon
- 2 teaspoons butter
Three-Cheese Potatoes #2

Place potatoes in a large pot, add enough salted water to cover, and bring to a boil
- 6 potatoes, peeled
- 1 1/2 cups cottage cheese, dry curd or pot style (1 16-ounce container is about 1-2/3 cups)
- 1 cup sour cream
- 2 tablespoons chopped scallions
- 2 tablespoons chopped fresh parsley
- 2 teaspoons dried dill weed
- 1 1/2 teaspoons salt
- 1/2 cup (2 ounces) shredded Cheddar cheese
- 1/2 cup (2 ounces) shredded Monterey Jack cheese
