Easy Banoffee Pie

Evenly pour caramel sauce into pie crust
- 1/3 cup caramel topping sauce
- 1 (6-ounce) prepared graham cracker pie crust
- 2 bananas, sliced
- 1 (4-serving) package instant French vanilla pudding, made according to package directions
- 2 cups frozen whipped topping, thawed
Layered Summer Pasta Salad

1 Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water
- 1 box Betty Crocker® Suddenly Salad® ranch & bacon pasta salad mix
- 1 1/4 cups ranch dressing
- 3 cups torn romaine lettuce
- 2 cups shredded carrots
- 2 cups fresh broccoli florets
- 2 plum (Roma) tomatoes, coarsely chopped
Double Crusted Apple Crisp

Preheat oven to 350. In medium bowl, combine flour, oats, brown sugar, cinnamon and melted butter
- 1 cup all-purpose flour
- 3/4 cup rolled oats (not quick)
- 1 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/2 cup butter, melted
- 4 cups (about 7) peeled, cored and thinly sliced apples
- 1/2 cup white sugar
- 1 tablespoon cornstarch
- 1/2 cup water
- 1/2 teaspoon vanilla extract
BBQ Chicken Quesadillas

Instructions Heat the oil in a large pan over medium-high heat, careful not to let the oil burn
- cooked, shredded chicken mixed with barbecue sauce (I did this but used 2 chicken breasts instead of the pork)
- red onion, sliced very thin
- shredded mozzarella
- cilantro, chopped
- extra barbecue sauce for drizzling or dunking
- 1 teaspoon olive oil

- 3 dozen Rolo's
- 1 box Devils Food Cake mix
- 2 eggs
- 1/3 c. oil
Old-Fashioned Jam Cake

Preheat the oven to 350 degrees F
- Cake:
- 3 cups self-rising flour
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cloves
- 1 teaspoon ground allspice
- 2 cups granulated sugar
- 1 cup (2 sticks) butter, softened
- 1 cup blackberry jam
- 1 cup raspberry jam
- 4 eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 cup chopped nuts, optional
- Caramel Icing:
- 2 cups packed light brown sugar
- 1/2 cup milk
- 8 teaspoons butter
- 1/8 teaspoon salt
- 4 cups confectioners' sugar
- 1 cup chopped nuts, optional
California Chicken Salad Wraps

In a medium bowl, combine dried plums, apple, celery, mayonnaise, salt and pepper; mix well
- 1/2 cup chopped California dried plums
- 1/4 cup chopped apple
- 1/4 cup chopped celery
- 2 tablespoons mayonnaise
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 2 (10-inch) spinach, tomato or whole-wheat flour tortillas
- 8 ounces grilled chicken breast strips
Breakfast BLT Sandwich

1.Spray a small skillet with nonstick cooking spray and place over medium heat
- 1 light Multigrain Thomas’ English muffin (or 2 slices light wheat bread)
- 2 slices center cut bacon
- 1 large egg, beaten (or substitute 1/4 cup liquid egg substitute)
- 2 mounded teaspoons light mayonnaise
- 2 leaves of lettuce
- 2 thin slices tomato
Home Style Cranberry Sauce

1. Mix sugar and water in medium saucepan
- 1 cup sugar
- 1 cup water
- 1 package (12 ounces) fresh cranberries; rinsed and drained
- 1/2 teaspoon Cinnamon, Ground
- 1/2 teaspoon grated orange peel; (optional)
- 1/2 teaspoon Pure Vanilla Extract
