Vegetable Nachos Supreme

Spread tortillas on a baking sheet and warm in a low, preheated oven (275°F) for 10 minutes
- 1 package (5 to 6 cups) gluten-free tortilla chips, such as corn and flax seed, whole grain, blue corn, etc.
- 1 can vegetarian refried beans
- 1 to 2 tablespoons chipotle in adobo, puréed
- 3/4 to 1 cup vegetable stock, divided
- 2 tablespoons canola or vegetable oil
- 1 medium zucchini, seeded and chopped into small dice
- 2 ears corn on cob or 1 1/2 cups frozen corn kernels, defrosted
- 2 green or red jalapeños, or Fresno chili peppers
- 1 small red onion, finely chopped
- 2 to 3 large cloves garlic, chopped
- 1 ripe beefsteak or 2 vine tomatoes, seeded and chopped
- Salt and pepper
- 1 teaspoon ground cumin
- 2 tablespoons thyme, chopped
- Juice of 1 lime
- A handful of cilantro leaves, chopped
- 1 1/2 cups shredded Monterey Jack, Chihuahua or Asedero cheese
- Pickled jalapeño peppers, diced avocado dressed in lemon juice and scallions, for garnish
Smothered Chicken

In 12-inch skillet, melt butter over medium heat
- 2 tablespoons butter or margarine
- 1 medium onion, sliced (about 1 cup)
- 1 package (8 oz) sliced fresh mushrooms (3 cups)
- 2 teaspoons sugar
- 1 jar (12 oz) chicken gravy
- 1 tablespoon dry sherry, if desired
- 1 deli rotisserie chicken (2 to 2 1/2 lb), cut into serving pieces, skin removed if desired
- 1 tablespoon chopped fresh parsley
Blueberry Sour Cream Pie

1. In large mixing bowl, or in stand mixer beat the cream cheese until smooth
- Filling:
- 1 9 inch pastry crust, baked
- 8 oz cream cheese, softened
- 1 C powdered sugar
- 3/4 C sour cream
- 1 t vanilla
- 1 8 oz package cool whip
- dash salt
- Topping:
- 3/4 C sugar
- 1/4 C cornstarch
- 10 T water
- 2 T fresh lemon juice
- 3 C fresh or frozen blueberries
- dash salt
- 1/2 t vanilla
- 1 T butter
Dulce de Leche No-Bake Snack Bars

Spray 13x9-inch pan with cooking spray
- Syrup:
- 4 cups Dulce de Leche Cheerios® cereal
- 1/2 cup dried banana chips
- 1/2 cup roasted whole almonds
- 1/2 cup roasted salted hulled pumpkin seeds (pepitas)
- 1/2 cup sweetened dried cranberries
- 1/2 cup packed light brown sugar
- 1/4 cup honey
- 1 tablespoon butter
- 1/4 teaspoon salt
Sparkling Lemon Ice

Dissolve the gelatin completely in the boiling water
- 1 package (4-serving size) lemon-flavored gelatin
- 1 cup boiling water
- 1 cup cold lemon-lime seltzer
- 3 tablespoons fresh lemon juice
- 1/2 teaspoon grated lemon peel
Amish Chow Chow Relish

In a large heat-proof bowl, combine all vegetables; set aside
- 2 cups frozen cauliflower, thawed and cut into small pieces
- 2 cups frozen sliced carrots, thawed
- 2 cups frozen cut green beans, thawed
- 2 cups frozen cut yellow wax beans, thawed
- 1 (15-ounce) can red kidney beans, rinsed and drained
- 1 large onion, coarsely chopped
- 1/2 red bell pepper, cut into 1/2-inch pieces
- 2 cups water
- 1 cup white vinegar
- 2 1/2 cups sugar
- 1/2 teaspoon celery seed
- 1/4 teaspoon turmeric
- 1/2 teaspoon salt
Asian Style Cole Slaw

Toss ingredients in a bowl and set aside in an air tight container
- 4 cups won bok cabbage, thinly slice
- 1/2 cup red cabbage, thinly shredded
- 2 cups watercress, leaves and small stems only
- 1/4 frozen peas, thawed
- 1 bunch green onions, finely chopped
- 1/2 cup mustard cabbage, thinly julienned
- 1 red bell pepper, ribs removed and julienned
- 1/4 cup cilantro, roughly chopped
- 1 cup carrot, grated
- 1/2 cup daikon, grated
Caramel Apple Cake

Spicy Maple Chicken Wings Recipe

Directions Cut chicken wings into three sections; discard wing tip sections
- 3 pounds chicken wings
- Oil for deep-fat frying
- 1/2 cup butter, cubed
- 1/2 cup maple syrup
- 1/2 cup Louisiana-style hot sauce
- 1/4 cup packed brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons water
- 1-1/2 teaspoons cornstarch
Crock Pot Black Bean Chili

In nonstick skillet over medium heat, cook ground meat and garlic until meat is no longer pink; drain
- 1 pound ground turkey breast or extra lean ground beef
- 1 large onion -- finely chopped
- 2 fresh garlic cloves, minced
- 1 can (15 oz) black beans -- rinsed and drained
- 1 large can (approx 29 oz) diced tomatoes
- 2 tbsp tomato paste
- 2 cups water
- 1 small green pepper diced
- 1 small red pepper diced
- 1 small yellow pepper diced
- 7 oz diced green chilies
- 1 tbs. chili powder
- 1 tsp. ground cumin
- 1 tsp. salt
