Spinach Fettuccine

1 Cook fettuccine in 5-quart Dutch oven as directed on package, omitting salt and oil
- 16 oz uncooked fettuccine
- 1 box (9 oz) frozen chopped spinach
- 1 tablespoon light stick butter
- 1 clove garlic, finely chopped
- 2 oz fat-free cream cheese, cut into cubes
- 3/4 cup chicken broth (from 32-oz carton)
- 3 tablespoons all-purpose flour
- 3/4 cup freshly grated Romano cheese
- 3/4 cup fat-free half-and-half
- 1 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 8 slices center-cut bacon, crisply cooked, crumbled (about 1 cup)
French Vanilla Bars

First Layer: Mix cake mix with room softened butter and 2 eggs (will be stiff)

Preheat oven to 350 degrees
- CAKE:
- 1-18.25 ounce box yellow cake mix
- 1 egg
- 1/2 cup (1 stick) butter, melted
- FILLING:
- 1-8oz package cream cheese
- 2 eggs
- 1 tsp pure vanilla extract
- 1-16 ounce box confectioners' sugar
- 1/2 cup butter, melted
Tortilla Soup

1. Preheat oven to 400 degrees F
- 8 corn tortillas, halved and thinly sliced
- Canola or olive oil cooking spray
- 1 tablespoon canola oil
- 3 Anaheim or poblano peppers, diced
- 1 medium onion, diced
- 1 teaspoon ground cumin
- 1 pound boneless, skinless chicken thighs, trimmed and cut into 1-inch pieces (see Tip)
- 4 cups reduced-sodium chicken broth
- 1 14-ounce can diced tomatoes with green chiles
- 2 tablespoons lime juice
- 1/2 cup shredded sharp Cheddar cheese
- 1/4 cup chopped fresh cilantro
Colorful Mac 'n' Cheese

Cook macaroni according to package directions
- 1-1/2 cups uncooked elbow macaroni
- 2 cups chopped zucchini
- 1/2 cup chopped onion
- 2 tablespoons canola oil
- 1 can (14-1/2 ounces) diced tomatoes, drained
- 1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
- 2 cups (8 ounces) shredded cheddar cheese

- 2 (14-ounce) cans sweetened condensed milk
- 1 (12-ounce) package semisweet chocolate chips
- 1 (12-ounce) package milk chocolate chips

- 1 * 1 tablespoon pure vanilla extract
- 1 * 1 cup all-purpose flour
- 1/2 * 1/2 cup heavy cream
- 8 * 8 ounces good semisweet chocolate chips
- 1 * 1 teaspoon instant coffee granules
