Grilled Chili-Rubbed Pork Tenderloin

Heat gas or charcoal grill
- 2 teaspoons packed brown sugar
- 1 1/2 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1/8 teaspoon ground red pepper (cayenne)
- 1 clove garlic, finely chopped
- 1 pork tenderloin (about 1 lb)
- 1 teaspoon vegetable oil
Lemon Butter Chicken

Preheat the oven to 400°F
- 4 chicken thighs or breasts (bone-in or boneless)
- 2 teaspoons smoked paprika
- Kosher salt, to taste
- Ground black pepper, to taste
- 1 Tablespoon unsalted butter
- 2 – 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 cups baby spinach, chopped
- Juice of 1 lemon (add the zest if you want extra lemon flavor)
- 1 Tablespoon chopped fresh thyme or 1 teaspoon dried thyme
Probable Rice Pilaf

Pour the chicken broth into a 4-cup measuring pitcher
- 1 (14 oz) can clear chicken broth
- 1 (8 oz) can mushrooms
- 1 cup Uncle Ben's long grain rice
- 1 TB dry minced chives or minced onions
- 1 tsp dry minced parsley
- 1/4 tsp black pepper
- 1/2 tsp season salt

- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 tablespoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground mace
- 1/2 teaspoon ground cloves
- 1 cup heavy whipping cream
- Butterscotch Cream:
- 1 package (3 oz) cream cheese, softened
- 2 1/2 cups frozen (thawed) reduced-fat whipped topping

- 1 package (12 oz) frozen cooked Swedish-style meatballs, thawed
- 1 jar (12 oz) beef gravy
- 1 jar (4.5 oz) sliced mushrooms, drained
- 1/2 cup frozen pearl onions, thawed
- 1/2 cup sour cream
- 2 teaspoons Worcestershire sauce
- 4 Frozen Buttermilk Biscuits
- 1 tablespoon chopped fresh parsley, if desired
