Jack-o’-Lantern Whoopie Pies

Heat oven to 375°. Spray cookie sheets with cooking spray
- 1 box spice cake mix
- 1 cup canned pumpkin (not pumpkin pie mix)
- 1/2 cup butter, softened
- 1/4 cup milk
- 1 egg
- 1 teaspoon orange gel food color
- 1/4 cup butter or margarine, softened
- 4 oz (half of 8-oz package) cream cheese, softened
- 1 1/2 cups powdered sugar
- 1/2 teaspoon maple extract
- 1 tube (4.25 oz) black decorating icing
- 1 tube (4.25 oz) green decorating icing
Rosemary Roasted Potatoes

Preheat oven to 450°F. Combine all ingredients in large bowl; toss to coat
- 2 large baking potatoes, sliced 1/2-inch thick
- 1 tablespoon Canola Oil
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/8 teaspoon ground black pepper
Lucky-7 Mac & Cheese

In a heavy saucepan, combine milk and cheeses
- 1 c. milk
- 1/2 c. extra-sharp Cheddar cheese, diced
- 1/2 c. Colby cheese, diced
- 1/2 c. pasteurized process cheese spread, diced
- 1/2 c. Swiss cheese, diced
- 1/2 c. provolone cheese, diced
- 1/2 c. Monterey Jack cheese, diced
- 1/2 c. crumbled blue cheese
- 16-oz. pkg. elbow macaroni, cooked
- salt and pepper to taste
Roasted Chicken Scampi

Preheat oven to 400 degrees F
- 4 boneless, skinless chicken breasts (1-1/2 pounds)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup (1 stick) butter
- 4 garlic cloves, minced
- 1 tablespoon chopped parsley
- 1 teaspoon chopped fresh dill
- Juice of 1 lemon

- 2 8-oz. tubes refrigerated biscuits, quartered and divided
- 1/3 c. brown sugar, packed
- 1/2 t. cinnamon
- 1/3 c. butter, melted
- 21-oz. can blueberry pie filling, divided
Chili with Corn Dumplings

- 2 1/4 cups chopped onion
- 3 (15 1/2-oz.) cans corn, undrained and divided
- 3 (14- 1/2 oz.) cans stewed tomatoes
- 3 (15-oz.) cans tomato sauce
- 1 tablespoon hot pepper sauce
- 6 tablespoons chili powder
- 1 tablespoon garlic, minced
- 1 1/3 cups biscuit baking mix
- 2/3 cup cornmeal
- 2/3 cup milk
- 3 tablespoons fresh cilantro, chopped
