Beef Stew with Bacon and Butternut Squash

Yields: 6 Bring meat to room temperature and pat dry
- 3 pounds beef chuck
- Kosher salt and black pepper
- Olive or vegetable oil
- 6 slices good quality, lean, smoky bacon, chopped 1-inch pieces
- 2 carrots, chopped
- 2 to 3 ribs celery, chopped
- 1 large onion, chopped
- 3 to 4 cloves garlic, sliced or chopped
- 1 tablespoon fresh marjoram or 1 teaspoon dried
- 3 tablespoons fresh thyme, chopped, divided
- 2 fresh bay leaves
- 2 tablespoons tomato paste
- 1 12-ounce bottle hard cider or 1 cup sweet vermouth
- 2 fat strips orange rind
- 1 quart beef stock
- 1 medium-large butternut squash, peeled and cut into 1 1/2-inch chunks
- A little freshly grated nutmeg
- 2 About 2 tablespoons honey or maple syrup
- 2 About 2 tablespoons grainy Dijon mustard
- Warm crusty bread and butter, to pass at table
Coconut Chocolate Cake

Preheat oven to 350 degrees
- 3 cups all-purpose flour
- 2 cups sugar
- 1/2 cup unsweetened cocoa
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups cold black coffee
- 2/3 cup vegetable oil
- 2 tablespoons white vinegar
- 2 teaspoons vanilla extract
- 1 (14 ounce) package sweetened flaked coconut, chopped
- 3/4 cup light corn syrup
- 1 (16 ounce) container chocolate frosting
S'Morelicious Cookies

Combine butter and sugars in a large bowl
- 1 c. butter
- 1 c. brown sugar, packed
- 1/2 c. sugar
- 2 eggs, beaten
- 1-1/2 t. vanilla extract
- 1-1/2 c. all-purpose flour
- 1-1/2 c. whole-wheat flour
- 1-1/2 t. baking soda
- 1/2 t. salt
- 2/3 c. mini semi-sweet chocolate chips
- 1 c. cinnamon graham crackers, crushed
- 1 c. mini marshmallows
- Optional: 1 c. semi-sweet chocolate chips, melted
Pork Scaloppine

Cut pork crosswise into 8 slices
- 1 pound pork tenderloin or boneless pork loin
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons olive oil, divided
- 2 tablespoons butter, divided
- 1 garlic clove, crushed
- 2 tablespoons pickled green peppercorns, drained or 2 tablespoons capers, drained (see Tips)
- 1 teaspoon lemon juice
Cheesy Chicken Enchiladas

Heat oven to 350°F. In medium bowl, stir together soup and enchilada sauce
- 1 can (18.5 oz) Progresso® Traditional Chicken and Cheese Enchilada Soup
- 1 can (10 oz) hot or mild enchilada sauce
- 2 cups shredded cooked chicken
- 2 cups shredded Monterey Jack cheese (8 oz)
- 10 corn tortillas (6 inches)
- 2 medium green onions, thinly sliced
CHOCOLATE PISTACHIO FUDGE

Melt the chopped chocolate, condensed milk and salt in a heavy based pan on a low heat
- 12 ounces 70 percent dark chocolate, chopped or 12 ounces semisweet chocolate, chopped
- 1 (14-ounce) can condensed milk
- Pinch salt
- 1 cup shelled pistachios

- 1 box refrigerated pie crusts, softened as directed on box
- 2/3 cup sugar
- 2 tablespoons cornstarch
- 1 cup cold water
- 2 egg yolks
- 2 teaspoons grated lemon peel
- 3 tablespoons lemon juice
- 1 tablespoon butter or margarine
- 1/3 cup sugar
- 1 package (8 oz) cream cheese, softened
- 1 egg
- 1/2 cup whipping cream, whipped
Herb Biscuit Knots

- 1/4 c. canola oil
- 1/2 t. garlic powder

Enchilada Beef

This enchilada beef recipe is a family favorite and is really easy to make
- 1/2 cup chopped onion
- 1 pound lean ground beef (90% lean)
- 1 cup tomato juice
- 1 can (6-ounce) tomato paste
- 1 can (4-ounce) chopped green chilies, drained
- 2 tablespoons plus 2 teaspoons enchilada sauce mix
- 2 cups (8-ounce) shredded Monterey Jack cheese, divided
- 1/2 cup coarsely crushed corn chips
- Additional corn chips, optional
