  • 2 carrots, chopped
  • 2 to 3 ribs celery, chopped
  • 1 large onion, chopped
  • 3 to 4 cloves garlic, sliced or chopped
  • 1 tablespoon fresh marjoram or 1 teaspoon dried
  • 3 tablespoons fresh thyme, chopped, divided
  • 2 fresh bay leaves
  • 2 tablespoons tomato paste
  • 1 12-ounce bottle hard cider or 1 cup sweet vermouth
  • 2 fat strips orange rind
  • 1 quart beef stock
  • 1 medium-large butternut squash, peeled and cut into 1 1/2-inch chunks
  • A little freshly grated nutmeg
  • 2 About 2 tablespoons honey or maple syrup
  • 2 About 2 tablespoons grainy Dijon mustard
  • Warm crusty bread and butter, to pass at table
