Spray a mini muffin pan and set oven to 450
- 2 cups of shredded cheddar

Apple Glazed Chicken

In shallow dish, combine flour, salt, and pepper
- 1/3 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (3 to 3-1/2-pound) chicken, cut into 8 pieces
- 2 tablespoons vegetable oil
- 1 cup apple jelly
- 1 teaspoon lemon juice
- 1/4 teaspoon ground cinnamon
- 3 red apples, cored and cut into 1/2-inch wedges (see Note)

- 2 cups mayonnaise

- 3 green onions, chopped
- Crumbled cooked bacon or thinly sliced green onions, optional

1 Heat oven to 400°F. Spray 11x7-inch glass baking dish with cooking spray
- 6 slices bacon, cut into 1/2-inch pieces
- 1 lb boneless skinless chicken thighs, cut into 1-inch pieces
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 large onion, cut into wedges (about 1 1/2 cups)
- 1 1/2 cups frozen sliced carrots (from 16-oz bag), thawed, drained
- 1 can (14.75 oz) cream style sweet corn
- 1/2 cup chicken broth (from 32-oz carton)
- 2 tablespoons country-style Dijon mustard
- 1 refrigerated pie crust, softened as directed on box
- 1 tablespoon milk
- 1/4 cup shredded Parmesan cheese (2 oz)
- 1 tablespoon chopped fresh parsley, if desired

- 3 cups water
- 2/3 cup Uncle Ben's long grain rice
- 1 envelope Lipton Noodle Soup Mix
- 1 (4 oz) can mushrooms, undrained
