Sausage Penne Bake

Cook pasta according to package directions
- 2 cups uncooked whole wheat penne pasta
- 3/4 pound Italian turkey sausage links, casings removed
- 1 small eggplant, peeled and cut into 1/2-inch cubes
- 1 medium onion, chopped
- 1/2 cup dry red wine or chicken broth
- 3 garlic cloves, minced
- 1 can (28 ounces) crushed tomatoes
- 2 cups (8 ounces) shredded part-skim mozzarella cheese, divided
- 3 tablespoons chopped ripe olives
- 2 teaspoons dried basil
- 1/4 teaspoon pepper
- 1/2 cup grated Parmesan cheese
Chicken and Zucchini (Pollo con Zucchini)

Cut chicken into serving pieces
- 3 pounds frying chicken, cut up
- 1 teaspoon salt
- 4 cloves garlic, crushed
- Deep fat for frying
- 3 tablespoons achoite oil
- 1 round onion, chopped
- 1 green pepper, chopped
- 1 (8 ounce) can tomato sauce
- 4 springs Chinese parsley, chopped
- 1/4 teaspoon dried oregano leaves
- 1/4 teaspoon pepper
- 1/2 cup butter or margarine
- 2 large zucchini, cut into 1 inch pieces
Golden Baked Macaroni

Preheat oven to 350 degrees
- 1 pound elbow macaroni or other medium pasta shape
- 1 cup ricotta cheese
- 2 cups (8 ounces) shredded mozzarella cheese
- 2 cans (8 ounces each) tomato sauce
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup grated Parmesan cheese
- Butter (optional)
Makeover Cream Cheese Streusel Bars

In a large bowl, combine the confectioners' sugar, flour, cocoa and salt; cut in butter until crumbly
- 1-1/4 cups confectioners' sugar
- 1 cup all-purpose flour
- 1/3 cup baking cocoa
- 1/4 teaspoon salt
- 1/2 cup cold butter
- 1 package (8 ounces) reduced-fat cream cheese
- 1 can (14 ounces) fat-free sweetened condensed milk
- 1 egg, lightly beaten

- 2 packages (8 ounces each) refrigerator crescent rolls (16 rolls)
- 1 package (8 ounces) brown 'n' serve sausages (8 sausages)

Baked Peach Pancakes

1 Heat oven to 400ºF. Place 2 tablespoons butter in each of two 9-inch pie plates
- 1/4 cup butter or margarine
- 1 cup Original Bisquick® mix
- 3/4 cup milk
- 4 eggs
- 2 medium fresh peaches, peeled and thinly sliced or 1 1/2 cups canned or frozen (thawed) sliced peaches, drained
- 1/4 cup sugar
- 1/4 teaspoon ground cinnamon
Strawberry Banana Smoothies

- 4 chicken breasts
- 1 bottle (24 oz.) GOYA® Mojo Piña
- 1 tbsp. GOYA® Adobo All-Purpose Seasoning with Pepper
- 1 cup GOYA® Palmitos – Salad Cut (Hearts of Palm), thinly sliced
- 1 container (10 oz.) of arugula or salad greens of your choice
- 1/2 cup GOYA® Passion Fruit Cocktail
- 1/4 red onion, diced
- 1 cup Extra Virgin Olive Oil
- 1/2 tsp. Adobo All-Purpose Seasoning with Pepper

- 1/3 cup reduced-sodium soy sauce
- 1/4 cup hoisin sauce
- 3 tablespoons lemon juice
- 1 tablespoon grated lemon peel
- 1/2 teaspoon pepper
- 6 salmon fillets (4 ounces each)
