Weeknight Paella

In 12-inch skillet, heat oil over medium-high heat
- 2 tablespoons olive or vegetable oil
- 1 package (5.9 oz) chicken-and-garlic rice and vermicelli mix
- 1 cup frozen bell pepper and onion stir-fry (from 1-lb bag)
- 1 3/4 cups Progresso® chicken broth (from 32-oz carton)
- 3/4 cup water
- 1 dried bay leaf
- 1/2 lb fully cooked chorizo sausage, cut into bite-size pieces
- 1/2 cup Green Giant® SELECT® frozen baby sweet peas
- 1 deli rotisserie chicken (2 to 2 1/2 lb), cut into 6 serving pieces
- 1 cup cooked deveined peeled medium shrimp, thawed if frozen, tail shells removed

- Crust:
- 1 Pillsbury® refrigerated pie crust, softened as directed on box
- Meyer Lemon Filling:
- 1 cup sugar
- 2 tablespoons cornstarch
- 2 tablespoons all-purpose flour
- 1 1/2 cups water
- 3 egg yolks, beaten
- 1 tablespoon grated Meyer lemon peel
- 1/3 cup Meyer lemon juice
- 1 tablespoon butter or margarine
- Topping
- 3 cups fresh strawberries, sliced
Thiefs Coconut Cake

Beat butter and sugar till light with mixer
- 3/4 cup unsalted butter softened
- 1 cup sugar
- 1 3/4 cup flour
- 1/4 cup cornstarch
- 1 tsp baking powder
- 1 tsp baking soda
- pinch salt
- 3 eggs
- 1 1/2 tsp vanilla
- 1 1/4 cup plain low fat yogurt or sour cream
- 1 cup grated coconut, I use unsweetened from the health food store. it is sweet enough.
Classic Cake Brownies

- 1 1/4 cups cake flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 6 ounces unsweetened chocolate, chopped fine
- 12 tablespoons unsalted butter, cut into 6 pieces
- 2 1/4 cups sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 cup pecans or walnuts, toasted and chopped coarse (optional)
Layered Taco Salad

- 1 15-ounce can black beans, rinsed and drained see savings

- 6 cloves garlic, minced
- 1 onion, minced
- 1/2 pound pork, thinly sliced
- 1/2 pound shrimp, thinly sliced
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon soy sauce
- 3 cups slivered bamboo shoots
- Deep fat for frying
- 24 lumpia (or egg roll) wrappers
Skinny Monkey Bread

Preheat the oven to 350 degrees
- 2 cans Reduced Fat Pillsbury Crescent roll
- 1/2 cup Sugar Free Maple Syrup
- 1 tbs Light Butter
- 3 tbs Cinnamon
- 1/4 cup tbs Stevia/Splenda (or sugar substitute of choice)
White Hot Chocolate

White hot chocolate with sticks of peppermint topped with whip cream is perfect for a cold winter day
- 3 cups half-and-half divided
- 2/3 cup white chocolate chips
- 1 (3-inch) cinnamon stick
- 1/8 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- Garnish: whipped topping, cinnamon, cocoa powder, and candy canes

- 1 box yellow cake mix
- 1 (3-ounce) box vanilla pudding (not sugar free!)
- 4 eggs
- 1/2 cup oil
- 1 cup milk
- 1 (16-ounce) can crushed pineapple, undrained
- 1 cup sugar
- FROSTING:
- 1 (8-ounce) package cream cheese, softened
- 1 stick butter or margarine, softened
- 3 cups confectioners’ sugar
- 1/2 cup chopped pecans (optional)
